Wine poached PEACHES. Easy and delicious twist of a classic recipe.
In the season of peaches i had to try this recipe of tender, wine poached peach with silky whipped cream and wine sauce. It turned out to be quite light and absolutely delicious dessert great for summertime!

Ingredients for 2:
- 350 ml White wine
- 200 ml Water
- 4 Tbsp Sugar
- 1 Tbsp Grenadine
- 2 hard Peaches
- 100 ml cream 30% fat
- Ice - cream, cookies, meringue
In a Saucepot combine 350 ml of white wine, 200 ml of water, 4 Tbsp of sugar, 1 Tbsp of grenadine (pomegranate syrup). Bring mixture to boil, then reduce to simmer, put peaches in and cover with lid or paper cartouche. Poach until peaches become soft, take them out and cool them down. In the meantime, increase the heat under the liquid and reduce it to syrupy consistency.
Unsweetened whipped cream will greatly compliment out poached peaches, so let’s take 100 ml of cream 30% fat or higher, otherwise it won’t whip. Use whisk or mixer, whatever works better for you. Bring cream to moderate peaks stage, when foam is holding the shape but still moves in the bowl.
Take of the skin from peaches put it on the plate, pour over some of the wine sauce, decorate with whipped cream, add crunchy cookies crumbs, portion of simple vanilla ice – cream, and some airy meringue.

In this episode I make a delicious and beautiful dessert of Poached Peaches, served on circles of puff pastry, with some mascarpone cream, and finished with the fragrant poaching syrup.
Serves 4
2 Peaches cut in half
200g Sugar
300g White Wine
300g Water
1/2 Vanilla Pod
Puff Pastry
1 sprig of Lemon Verbena (or Lavender, Rosemary, or Thyme)
Equal amounts of Mascarpone and Heavy Whipping Cream

Easy baked peaches with walnut and dates
This is my favorite fruit desserts to enjoy during the summer. It is easy, healthy, delicious and best served with white wine or vanilla ice cream.
Ingredients for 2 servings
1 peach, pitted and sliced half
2 sweet dates, chopped
1 tablespoon walnuts, chopped
2 teaspoons sugar
2 tablespoons white wine
Mint for garnish
Bake at 375°F (190°C) for 15 minutes
NOTES:
I use Medjool California dates. If it’s not available in your area, you can substitute with raisins or fresh figs. When serving children, white wine can be skipped and it will still taste good.
