1 1/2 c Brown sugar, firmly packed 1/2 c White sugar 2 tb Passover vanilla sugar Or 1 ts vanilla 1 c Unsalted butter or margarine 2 Eggs 1/4 ts Salt 1/4 c Matzoh meal 1/2 c Matzoh cake meal 1 c Potato starch 2 c Chocolate chips : Cream both sugars together with vanilla sugar or vanilla, butter. Blend in the eggs. Stir in the salt, matzoh meal, cake meal potato starch and chocolate chips. Chill the dough for over an houror over night. (It freezes well) : Preheat oven to 350 F . Line a couple of baking sheets with parchment paper. Scoop teaspoons of dough onto the sheets, leaving room for them to spread. : Bake in the preheated oven about 12 minutes. Let the cookies sit on the parchment paper for 10-15 minutes, until just cool. Using a metal spatula transfer them to racks to finish cooling. The Washington Post 3/96 Walt

It’s less that a week until Pesach (Passover) so I’ll be doing a mini-series sharing my favourite recipes just in time for the holiday!
First up; CINNAMON BALLS ????
I remember making these every year throughout my childhood and they have to be my favourite! They’re so simple to make and mouthwatering-ly delicious too, plus they’re naturally gluten and dairy free too!

- Whisk egg whites to soft peak - Mix in all the other ingredients (except the icing sugar) - Roll into bite sized balls and place onto a baking tray - Bake at 160°C for about 20 minutes until they start to brown - Remove them from the oven and dust with icing sugar whilst still warm - Leave to cool and store in an airtight container for up to one week
Same as regular cookies but with almond flower. Also watch that chocolate cause all these emulsifiers be kitnyot. Also don't use peanuts cause they aren't nuts. Also don't use Pam cooking spray cause it has soy in it or something.
