How To make Parsley Jelly
Ingredients

prepared juice (2 large bunches of parsley and 3 cups boiling water)

lemon juice

fruit pectin, sure jell, box

food coloring, green, few drops
Directions:
Wash and chop parsley. Measure 4 cups into bowl. Add boiling water, cover and let stand 15 minutes. Strain through several layers of cheesecloth. Measure 3 cups into 6-8 quart saucepot. Add lemon juice.
Measure sugar and set aside. Mix fruit pectin into juice in saucepot. Place over high heat and stir until mixture comes to a full boil. Immediately add all the sugar and stir. Bring to a full rolling boil and boil 1 minute, stirring constantly.
Remove from heat, skim off foam with a metal spoon and stir in food coloring. Ladle quickly into hot jars, filling within 1/8 inch of tops. Wipe rims and threads. Cover with two-piece lids. Screw bands tightly. Invert jars for 5 minutes, then turn upright. After 1 hour, check seals, or follow water bath method.
Makes 5 (1 cup) jars
Note: This recipe tastes great with crackers and cream cheese or as an accompaniment to meats.

For 4 people

Ingredients :
1 half-salted pork shoulder
2 calf's feet (split in half lengthwise)
3 Carrots
2 Onions
1 small head of garlic
1 large bunch of parsley
1 bouquet garni
4 sheets of edible gelatin
1 Bottle of dry white wine
10 cl Wine vinegar
2 Cloves
Salt
Pepper
Step 1: Soak the pork shoulder for 12 hours in water to desalinate it.
Peel, rinse and dry the carrots. Peel the onions and stud them with cloves.
Step 2: Place the well-drained pork shoulder in a large pot, add the veal trotters, carrots, onions, 4 whole unpeeled garlic cloves and the bouquet garni.
Step 3: For the white wine, vinegar and 4 liters of water. Pepper but do not salt.
Leave to simmer for 3 hours, watching the cooking to avoid boiling.
Step 4: Remove the pot from the heat and let stand for 30 minutes.
Drain the meat, remove the bones from the calf's feet, cut their rind into very small pieces. Cut the pork shoulder meat into regular cubes.
Step 5: Filter 1 liter and a half of the cooking juice and dissolve the gelatin sheets.
Peel and very finely chop the remaining garlic cloves.
Step 6: Rinse and squeeze the parsley, chop it very finely.
In a large salad bowl, mix the pork with the calf's trotter rind, minced garlic and parsley, salt a little and pepper.
Step 7: Transfer this preparation to a terrine, then For over the cooking broth with the gelatin added.
Cover with cling film and refrigerate for 12 hours to let the jelly set.
Step 8: Serve the parsley ham cut into thick slices, accompanied by country bread, gherkins and a green salad seasoned with olive oil and balsamic vinegar.
