How To make Parmesan Sweet Potatoes& Pasta
1 large sweet potato
2 tablespoons light brown sugar
2 teaspoons olive oil
2 teaspoons margarine
1 tablespoon water
1 tablespoon grated parmesan cheese
6 ounces spinach pasta, fresh
1. Prick the sweet potato in several places, place on a paper towl, and microwave until tender, 8 to 9 minutes, turning half-way through cooking time. Let stand until cool enough to handle, then slip off skin.
2. Put a large pot of water on to boil. Pre-heat broiler and spary, or lightly oil, a baking sheet. Cut potato crosswise into 1/2 inchslices andplace on prepared sheet.
3. In a small saucepan, combine sugar, oil, butter and water. Cook over medium heat, stirring constantly, until sauce is smooth and bubbly, about 2 minutes. Reserve about 2 tablespoons of sauce. Brush remaining sauce over potato slices, sprinkle with Parmesan cheese, and broil until slightly browned, 1 to 2 minutes.
4. Cook fettucine according to package directions, drain well, and toss with reserved sauce. Mound pasta on serving plates and top with potato slices.

INGREDIENTS
- 1 large wild caught Cod fillet
- ~3 cups fresh chopped asparagus
(~1 in pieces, make sure to remove the bottoms)
- ~3 cups baby red potatoes cut into quarters
- Extra virgin olive oil
- Seasonings: salt, pepper, Flavor God Garlic Lovers, Flavor God Lemon & Garlic.

DIRECTIONS
1. Cut the potatoes and add to a large mixing bowl. Add in olive oil, salt, pepper and Flavor God Garlic Lovers. Give a good toss then place on a baking sheet lined w/ parchment paper. Place in the oven at 400 for ~15 minutes.
2. While the potatoes are in the oven, Prep the asparagus and the cod. Cut the asparagus and add to the large mixing bowl. Add in olive oil, salt, pepper and Flavor God Lemon & Garlic. Give a good toss. Cut the cod into smaller fillets.
3. Once the ~15 minutes are up, remove the potatoes and add the asparagus to the pan. Mix and create slots for the Cod then add those next. Hit the cod with a olive oil and season the same as the asparagus. Add a slice of lemon on top of each one then place back in the oven for ~12-15 minutes or until largest piece hits 145 degrees internal.
4. Remove from oven, garnish with chopped parsley and extra lemon juice.

Family Lunch for Under $10: Veggie Bowl w/ Parmesan Couscous + Parmesan Sweet Potato Sticks
Ingredients/Cost:
2 sweet potatoes: $2.30
2 cobs corn: $1.50
5 oz broccoli: $0.95
2.5 oz spinach: $1.10
1 tbsp oil: $0.30
1 tbsp butter: $0.20
1 tsp lemon juice: $0.15
1/4 cup vegetable stock: $0.25
1 oz Parmesan cheese: $1.05
3/4 cup instant couscous: $1.10
Seasonings (salt/garlic powder/thyme/crushed red pepper): $0.30
Total cost = $9.20 or $4.60 per serving
Directions (est. time ~30 minutes, serves 2 adults and 1 toddler):
1. Preheat oven to 375F. Peel and cut one of the sweet potatoes into sticks ~1/2 inch thick and then place on a baking sheet. Grate parmesan cheese over the top and bake for ~15-20 minutes or until fully cooked and soft in the middle.
2. Dice the second sweet potato, cut the broccoli into small florets and cut the corn off the cob. Prepare the instant couscous according to package instructions.
3. Put a pan on the stove over medium heat and add 1 tbsp oil. Add the diced sweet potato and cook ~3-4 minutes. Once browned on the first side, stir and season with some salt, garlic powder, thyme and crushed red pepper.
4. Add the corn to the pan along with 1 tbsp butter. Mix the corn and sweet potato well, add a bit more of the seasonings and cook for ~4 minutes, stirring occasionally.
5. Add the broccoli to the pan along with the lemon juice. Cook for ~2-3 minutes, stirring occasionally. Add the vegetable stock and then the spinach and cook for ~1-2 minutes, until the spinach just starts to wilt. Add a touch more seasoning and turn off the heat.
6. Grate some parmesan cheese into the finished couscous. Serve the vegetable mixture over the top of the couscous.
