How To make Pancit Bijon Guisado (Sauteed Rice Sticks)
1 lb Skinless chicken breasts
1 lb Lean pork, fat trimmed
1/4 c Vegetable oil
3 Cloves garlic; minced
1 md Onion; thinly sliced
1/2 lb Medium shrimp; shelled,
-deveined 3 tb Soy sauce
1 1/2 tb Fish sauce
4 c Chinese cabbage; shredded
3 Carrots; julienned-2" long
1 1/2 c Celery; thinly sliced
1/2 ts Salt
1/8 ts Pepper
1 1/2 c Broth; from boiling chicken
1 lb Rice sticks; soaked in hot
-water about 15 min, til -soft, then drained 1 bn Scallions; finely chopped
1 bn Cilantro; leaves chopped
Hard cooked eggs; garnish 6 Limes; cut in wedges
Bring chicken and pork to boiling in 1 1/2 cups water. Reduce heat and simmer 15 minutes. Remove from heat; when cool enough to handle, slice meat into small pieces. Reserve the broth. Heat oil in a very large, wide saute pan. Saute onion and garlic until onion is transparent. Add meats, shrimp, soy sauce and fish sauce and stir-fry 5 minutes. Over high heat, add cabbage, carrots, celery, salt, pepper and 1 cup of broth. Stir-fry for 2 minutes. Set aside 1 cup of mixture. Reduce heat to lowand add rice sticks, stirring and tossing gently with wooden spoons until heated through and mixed with meat and vegetables, about 3 minutes. If the mixture seems dry, add more broth. Transfer to platter, spoon reserved mixture on top and garnish with chopped scallions, cilantro and egg slices. Squeeze lime over each serving and sprinkle with additional garnishes. Serve with soy sauce.

I decided to film my friend Chrissy's and Chris' mother making Pancit Bihon. I recorded this video a few years back. Please excuse the focusing issues. Pancit bihon is a Filipino rice noodle stir fry dish. It is best served with a squeeze of calamansi or lemon juice.

300g vermicelli /Sotanghon (pure potato, cooked according to package instructions)
750g (¾ kg) chicken or pork
1 big cabbage
2 big carrots
1 white onion
10 cloves garlic
3 small red onions
1 large bell pepper
1 shrimp broth cubes
1 packet Ginisa mix seasoning or MSG to taste
salt to taste (about 1 tbsp)
pepper to taste
annatto / asuete powder to color
100mL dark soy sauce / toyo (scant ½ cup)
60mL oyster sauce (4 tbsp)
oil to saute (60 mL or ¼ cup)
750 mL water (3 cups)

Isa sa paborito nating mga pinoy ang Pancit kaya naman hindi ito nawawala sa handaang pinoy.Lagi itong nakikita hapag kainan nating mga Pinoy tulad ng Birthdays,Weddings,Fiesta,Christmas at lalo na na hindi nawawala ito sa Pagsalaubong ng Bagong taon dahil isa sa paniniwala natin na pamahiin na kumain ng pancit para humaba ang buhay dahil na rin siguro sa mahabang noodles nito na tila ba nagsisimbulo ito ng mahabang buhay.Ngunit ito ay paniniwala lamang na nakanasayan natin mula pa sa ating mga ninuno ito ay gabay lamang pero wala namang mawawala kung sundin natin ang mga pamahiin na ito.Kaya naman,isama ito sa handa ninyo sa darating na pagsalubong ng panibagong taon o New Year.

1 cup oyster sauce
1/4 kilo pork or chicken meat
250g kikiam
1 large carrot
1/2 head cabbage
1 medium sayote
1/4 kilo green beans

1 pork or chicken cube
1 tbsp fish sauce or patis optional
1/4 tsp ground black pepper
3 tbsp cooking oil
3-4 cups water

We all love pancit! So here’s the easiest pancit recipe you can easily prepare anytime!
INGREDIENTS:
Set A:
250 grams rice vermicelli noodles (bihon)
Water, for soaking the noodles
Set B:
2 tablespoons cooking oil
1 piece onion, chopped
3 cloves garlic, minced
2 pieces chicken breast fillets, sliced thinly
1 piece Chinese chorizo, sliced thinly
1/2 cup kikiam or squid balls, sliced into thin rounds
200 grams shrimp, peeled and deveined
2 stalks celery (optional)
1 piece large carrots, sliced thinly
1 ½-2 cups chicken broth
2-3 tablespoons shrimp head juice
4-8 tablespoons oyster sauce
Salt, to taste
2 tablespoons fish sauce, to taste
Set C:
1 small cabbage, shredded
2 tablespoons chopped green onions
Black pepper, to taste

my nieces and nephews request is my pancit bihon. Masarap daw ang luto ko kaya eto nagluto ako uli ng 1.5 kg na bihon for everybody. Were going somewhere magkainan at lahat may dalang food. Kaya tara join us!
Ingredients
Bihon - 1.5 kg
pork - 1/2kg. to 1 kg.
baguio beans - 1/4kg.
chicharo (snow peas) - 1/4 kg.
carrots - 3 pcs. (small)
cabbage - 1/2
red bell pepper - 2 pcs.
celery - 2-3 pcs.
ground black pepper - 1 tsp.
water - 1.5 to 2 liters
pork cube - 1-2 pcs. (optional)
soy sauce - 1 to 1.5 cups (depends on your taste)
cooking oil - 2-3 tbsp.
garlic - 6-8 cloves
onions - 3 pcs.

PANSIT with CRISPY PORK
1/2 kilo liempo, cut into small cubes
1 teaspoon Worcestershire sauce
1/2 teaspoon rock salt
1/2 teaspoon black pepper
Pinch of cinnamon powder
2 tablespoons fresh milk
1-2 cups Cassava flour for coating
1/4 cup oil from frying the pork
2 tablespoons minced garlic
1 red onion, sliced
6 cups water OR stock
1/2 cup oyster sauce
1 tablespoon brown sugar
1 teaspoon black pepper
½ head cabbage, chiffonade
2 carrots, cut into sticks
2 cans shitake mushrooms, sliced
2 cans button mushroom (sliced)
Salt or fish salt, to season as desired
400 grams egg noodles
