Hawaiian Style Oxtail Soup in the Pressure Cooker
Aloha and welcome to my channel! Today, I'll be sharing with you my recipe for Hawaiian-style oxtail soup. This delicious and hearty soup is a staple in Hawaiian cuisine and is perfect for those chilly or rainy nights.
In this recipe, I'll be using an instant pressure cooker to cook the oxtails to perfection. I'll also be adding a variety of fresh vegetables and aromatic spices to enhance the flavors of the dish.

INGREDIENTS
- 3 strips of dried orange peel
- 3 lbs (1360.78g) oxtails
- 3 whole-star anise pods
- 4 bay leaves
- 1 tsp (2.3g) whole black peppercorns
- 3 inches (7.62cm) fresh ginger, thinly sliced
- 3 carrots cut into obliques
- Half medium onion, roughly chop
- 1/2 tbsp (7.5g) of fish sauce
- 1 tbsp (17.1g) Hawaiian salt
- 2 quarts (1.89L) chicken broth
- 1 bunch of mustard greens, roughly chopped
- Garnish with sliced green onions and cilantro
- Side of grated ginger and shoyu
DIRECTIONS
1. To make the dried orange peel strips, peel long strips from the orange and bake them in the oven at 200 degrees Fahrenheit or 93 degrees celsius for 30 minutes.
2. In the instant pressure cooker, place the oxtails in the pot and cover them with enough water to cover them. Put on saute mode and once boiling, parboil them for 20 minutes. Once finished, dump the water and rinse the oxtails under running water - removing any debris or scum. Wash the pressure cooker pot to remove the scum as well.
3. Place the oxtails back in the pot and the pressure cooker. Add in the orange peels, star anise, bay leaves, peppercorns, ginger, carrots, onion, fish sauce, Hawaiian salt, and chicken broth. Add more chicken broth to the max pressure line if you want extra broth. Set the pressure cooker to high for 45 minutes.
4. Once finished, do a manual release. Bring the soup back to a simmer and add in the mustard greens for 10 minutes or until tender.
5. Garnish with cilantro and green onions. Enjoy with rice and ginger and shoyu.

How To Make Pressure Cooker Oxtail Soup (Recipe) オックステールスープの作り方 (圧力鍋) (レシピ)
With help of pressure cooker, Oxtail Soup (Hong Kong Style Borscht) can be prepared in much less time! This hearty and flavorful tomato-based soup is cooked with oxtail and stew beef, onion, celery, carrot, tomatoes, potatoes, and cabbage.

Ingredients
2 lb (900 g) oxtails
1 medium onion
2 celery stalks
2 carrots
¼ cabbage (160 g/5.4 oz)
2 steak tomatoes
2 Yukon gold potatoes
½ lb (227 g) stew beef
1 1/2 Tbsp extra virgin olive oil
Pinch kosher salt
Freshly ground black pepper
4 cups beef broth (1 L or 1 QT)
2 Tbsp tomato paste
Seasonings A
1 tsp paprika
1 Tbsp dried basil
2 bay leaves

3 Tbsp brown sugar
2 Tbsp white wine vinegar
2 tsp kosher salt (for table salt, use half)

Easy Instant Pot Hawaii Oxtail Soup Recipe
Here is a Hawaii style oxtail soup recipe for those cold winter days. Surely to warm up your body and soul - of course with a side of rice! Super easy to make in the Instant Pot or pressure cooker. If you do not have one, you can simmer the oxtails for about an hour and a half using the same recipe with a lid covering the pot.
Ingredients:
3lbs of oxtail
2.5 quarts of water or about 10 cups
1 small carrot
2 stalks of celery
1/2 a medium onion
5 star anise
3 dried Asian orange peel (if you can't find it, peel a tangerine and let the peel sit on the counter to dry for about a week. If using a regular orange, use the peel and not the rind as that is bitter.)
3 cloves of garlic
1 finger of fresh ginger
1 bag of raw peanuts
1 package of dehydrated shitake mushrooms or any other veggies you'd like to add (e.g. mustard greens, bok choy, daikon, etc.)
Salt and pepper
Hawaiian or rock salt
Soak oxtails in a large container with cold water for about a half an hour. This is to get rid of the excess blood so it will not make blood curdles in your soup pot. Empty the water from the container after a half an hour of soaking and rinse off the oxtails. Season with salt and pepper. Put aside.
Reconstitute your shitake mushrooms in a bowl of water. Once reconstituted, rinse the mushrooms and get rid of the water from the bowl that it was soaking in. Put aside.
Rough chop the carrot, celery, onion, and ginger. Mince the garlic. Put aside in a bowl or plate.
Set your Instant Pot on sauté mode. Place your oxtails in the pot and brown. Do not put oil. You can if you want, but your soup will be very oily. Brown all sides of the oxtails to lock in the flavor. Just brown them on the outside. They will still raw inside. Put them aside after browning.
Add about a tablespoon of olive oil into the pot after removing the oxtails. Throw in your mirepoix (carrots, celery, onion) and your ginger and garlic. Sweat the vegetables for about 5-10 minutes.
Season lightly with salt and pepper, but not too much.
Add your water into the Instant Pot and using a spoon, scrape off all the browned bits left on the bottom of the pan. Add 1/2 tablespoon of Hawaiian salt, star anise, orange peels, and your peanuts. Finally add your oxtails into the pot.
Close the Instant Pot lid and set the Instant Pot to pressure cook mode for 45 minutes. Once the IP is done cooking, let it naturally vent for about 10 minutes. Then manually vent the pot to open the lid. Once the soup is done, add your mushrooms and any other vegetables such a mustard greens into your soup. Do not add these vegetables while pressure cooking otherwise they will be very mushy and unappetizing.
Fish out the vegetables, star anise, ginger and orange peel. If it is easier, you can put these ingredients into a cheesecloth to fish it out of the soup faster.
Serve while hot and top with chopped cilantro and green onions. Usually this is eaten with a side of white rice. Some people like to put a mix of ginger and soy sauce into the soup. This can be made with putting soy sauce into a dipping dish and mixing a spoonful of grated fresh ginger into the soy sauce.

Ingredients:
oxtail 1kg
white raddish (thick slices) 2 nos
carrot (cut into chunks) 2 nos
red onion (quartered) 2 nos
garlic (whole cloves) 2 bulbs
oyster sauce 4 tbsp
worchestershire sauce 2 tbsp
maggi seasoning 1 tbsp
nutmeg powder 1 tbsp
crushed peppercorns 1 tbsp
cinnamon stick 1 pc
star anise 2 nos
Instructions:
1. Firstly, press the Open lid cooking function then add in some oil.
2. Then, add in the aromatics and saute until fragrant.
3. Next, add in the red onions and garlic, black peper and saute until fragrant.
4. After that, add in all the oxtail.
5. Add in the oyster sauce.
6. Then, add in the Worcestershire sauce and some seasoning.
7. Add in the nutmeg powder.
8. Add water to cover 3/4 the amount of ingredients.
9. Put the lid on and make sure that the valve is at Seal or the pressure cooker won't be able to cook properly as it will continuously be releasing steam. Preset the timer for Stew but set to 40 minutes.
10. Once done cooking, press the One-Touch Release Button on La gourmet pressure cooker to release the steam.
11. Season with salt and ready to serve!
