Red Velvet Cake | The Best Red Velvet Ever

Red Velvet is a theme that everybody likes. It’s actually a combo of cocoa powder and red food colouring so it seems fairly easy but it’s rather tricky to get it right. There are many different ways of making the red velvet cake and I’ve opted for the genoise type. Hope you like it!
Here is a detailed video on how to make a classic genoise. It’s detailed and contains lots of tips & tricks so I strongly recommend you to watch it before tackling the red velvet genoise:
▶Red Velvet Cake◀
1 Cake: 15cm diameter
⊙Red Velvet Genoise⊙
Whole Eggs 140g
Egg Yolks 30g
Sugar 95g
Cake Flour 77g
Cocoa Powder 8g
Melted Unsalted Butter 16g
Buttermilk 16g (If making from scratch, then add 1g of lemon juice to 15g of milk and let it sit at room temp for 10mins then use it)
① Add sugar to whole eggs + egg yolks and raise the temp. to 40°C using hot water bath.
② Whip until the batter becomes thick enough to draw a ribbon shape on top.
③ Add sifted cake flour + cocoa powder and fold them in carefully.
④ Add melted butter + buttermilk and mix well.
⑤ Bake at 165°C for approx. 30mins.
⊙Microwave Sponge⊙
Eggs 50g
Sugar 40g
Cake Flour 15g
Melted Unsalted Butter 10g
Red Food Colouring
① Add eggs and sugar into a bowl and bring the temp up to 40°C.
② Whisk until you get a lot of volume + ivory colour.
③ Sift in the cake flour and mix well.
④ Add the melted butter as well as the food colouring and mix well.
⑤ Pour the batter into a cup.
⊙Cream Cheese Frosting⊙
Cream Cheese(room temp) 350g
Sugar Powder 130g
Unsalted Butter(room temp) 170g
Lemon Zest 4g
Heavy Cream 33g
① Make sure the cream cheese and butter is at room temp (20℃)
② Smooth out the cream cheese by lightly beating it.
③ Sift in the sugar powder and mix.
④ Smooth out the butter and add it in.
⑤ Add in the lemon zest, followed by heavy cream.
⑥ If you find that the frosting is a bit too runny, then put it in the fridge to harden it up a bit.

Please refer to the video for the assembly. The piping nozzle I used are 806, 865, 868.
How to store: Can store in the fridge for up to 2~3days. The cake dries out so cover it up with a cake cover.

오늘은 아름다운 레드 벨벳 케이크를 만들어 보겠습니다.
좀 더 간단하고 쉬운 방법으로 아름다운 레드 벨벳 케이크를 만들어 봤어요.
기존의 너무 부서지는 질감에서 좀 더 탄력 있으면서 부드러운 케이크의 질감으로 만들었어요.
굉장히 부드럽고 푹신한 케이크라고 자부합니다.
재료도 비교적 간단하고요..
오늘은 홍국 쌀가루를 이용해서 만들었는데요.
색소를 기존의 레시피에서 현저히 작은 양을 사용하고도 아름다운 레드 칼라를 만들 수 있었어요.
홍국쌀가루란?
먼저 홍국쌀은 백미에 붉은 누룩곰팡이를 발효해서 만들어집니다.
대략 4~6주 정도의 시간이 걸리며 이 기간 동안 천연 붉은 색소가 생성되면서 백미가 빨간색 쌀이 됩니다.
홍국 공팡이가 만들어 내는 붉은 색 색소는 종류는 대략 50여종이나 되고 균주에 따라, 배양 조건과 시간에 따라 그 종류와 칼라가 달라집니다.
그래서 같은 회사의 제품을 구입했다 하더라도 그 제품에 따라 그 때 그때 색이 달라진답니다,.
이 홍국쌀은 과거 중국 황실에 진상되었던 귀한 한약 재료였어요.
발효 과정에서 나오는 모나콜린 K ( Monacolin-K )이 콜레스테롤을 낮추고 혈관 개선에 도움을 주며 성인병을 예방하고 소화를 잘 되게 하며, 복통과 설사에도 도움을 줍니다.
이런 홍국쌀을 건조한 후에 분쇄, 살균 과정을 거친 가루가 홍국쌀가루입니다.

박력분 75g ( 1/2컵 )
코코아 가루 5g ( 1 tsp )
홍국쌀가루 15g (1 Tbsp + 1/2 Tbsp )
( 박력분 85g + 코코아 가루 10g + 레드 식용 색소 )-- 홍국쌀가루 미 사용시
우유 35g ( 2 Tbsp +1 tsp )
무염 버터 30g ( 2 Tbsp )
식용 색소 (레드 칼라)
♥ 크림치즈 프로스팅
크림 치즈 180g ( 3/4 컵 + 2 큰술 )
설탕 35g ( 3 큰술 )
레몬즙 10g ( 2 작은술 )
바닐라 익스트랙 3ml
생크림 235g ( 1 컵 )
● 커피 시럽
물 50g ( 3 큰술 + 1 작은술 )
설탕 30 g ( 2 큰술 + 1 tsp )
깔루아 또는 럼 5ml ( 1 tsp )
ㅡㅡㅡ 만드는 방법 ㅡㅡ
1. 물과 설탕을 계량하여

3. 깔루아 또는 럼을 넣어 섞어 주신 후 실온으로 식혀 주세요.

Okay I am SO EXCITED for this one! This red velvet cake is so incredibly soft, full of flavour and is topped with the most delicious cream cheese buttercream. I couldn't think of a better match!
This is an updated version of my original red velvet cake recipe. I tweaked it slightly and came up with this version which I am IN LOVE WITH! I hope you all love it just as much :)
HOMEMADE CAKE RELEASE:
CREAM CHEESE BUTTERCREAM:
INGREDIENTS:
2¼ cups (275 g) flour - regular all purpose (see note 3 on blog post if you want to use cake flour)
3 tbsp (18 g) cornflour - also known as cornstarch
3 tbsp (14 g) cocoa powder - unsweetened
½ tsp baking soda
1 tsp baking powder
½ tsp salt - omit if using salted butter
6 tbsp (86 g) unsalted butter - room temperature
¾ cup (141 g) unflavoured vegetable oil - I use canola
1¾ cups (344 g) white granulated sugar
3 large eggs - room temperature
1 tbsp (12 g) vanilla essence/extract
1½ tsp white vinegar
3½ tbsp (38 g) red liquid food colouring
¾ cup (158 g) buttermilk - room temperature
Bake at 160 °C (320°F) with the fan on. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).

Ingredients:
For the cake:
2½ cups (310g) all-purpose flour
2 tablespoons (16g) Cocoa powder
1 teaspoon Baking soda
1 teaspoon Salt
1½ cups (300g) Sugar
1 cup (240ml) buttermilk, room temperature
1 cup – 1 tbsp (200g) Vegetable oil
1 teaspoon white Vinegar
2 Eggs
1/2 cup (115g) butter, room temperature
1-2 tablespoons Red food coloring
2 teaspoons Vanilla extract
For the frosting:
1¼ cups (300ml) Heavy cream, cold
2 cups (450g) Cream cheese, room temperature
1½ cups (190g) Powdered sugar
1 teaspoon Vanilla extract
Directions:
1. Preheat oven to 350F (175C).
2. In a large bowl sift flour, cocoa powder, baking soda and salt. Stir and set aside.
3. In a separate large bowl, beat butter and sugar until smooth. Add eggs one at the time, beating until combined after each addition. Add oil, vinegar, vanilla extract, buttermilk and beat until combined. Gradually add the dry ingredients and mix after each addition until well combined. Add food coloring and mix.
4. Pour the batter into two 8-inch (20cm) round baking pans greased with butter and dust with flour. or you can use one pan and bake twice. Also you can use springrorm pan lined with parchment.
5. Bake 35-40 minutes, until a toothpick inserted into the center comes out clean.
6. Cool the cakes in their pans on a wire rack for 10 minutes. Release from the pan, then let cool completely.
7. Make the frosting: in a large bowl, beat cream cheese with powdered sugar and vanilla extract. Beat until smooth and creamy. In a separate bowl with heavy cream to stiff peaks. Then fold into the cream cheese mixture.
8. Cut the top of the cakes. Cut 8-12 heart shapes from the top layer of the cakes. Make crumbs from the leftovers. Set aside.
9. Place one cake layer with flat side down. Spread a layer of frosting, place the second layer of cake on top of the frosting, flat side up. Spread evenly the frosting on top and sides of the cake.
10. Decoration: Decorate the cake with the crumbs and the hearts.
11. Refrigerate for at least 2-3 hours before serving.
Notes:
• All cake ingredients should be in room temperature
• You can use all-purpose flour or cake flour
• Instead of buttermilk you can use milk+1 tablespoon vinegar (mix and let stand 5-10 minutes).
