How To make Oriental Ginger Shrimp
8 Unshelled raw jumbo shrimp,
-thawed if frozen 1/2 c All-purpose flour
1/4 ts Salt
1 ts Corn oil
1/4 c Water
1 Piece ginger root, peeled,
-grated (1") 1 Garlic clove, crushed
1 ts Chili sauce
1 Egg white
Vegetable oil 1 Green onion daisy
Red bell pepper strips Shell shrimp, leaving tail shells on. Make a small incision along spines. Remove black spinal cord from shrimp. In a bowl, combine flour, salt, corn oil and water. Stir in ginger, garlic and chili sauce and beat well. Stiffly whisk egg white, then gently fold into batter until evenly combined. Half fill a deep-fat fryer or saucepan with oil; heat to 375'F. (190'C.) or until a 1/2" cube of day-old bread browns in 40 seconds. Hold each shrimp by its tail and dip into batter, then lower into hot oil. Fry 3 minutes or until golden. Drain on paper towels. Garnish with green onion daisy and bell pepper strips and serve hot.

INGREDIENTS
10-15 large shrimp, peeled and deveined
4-6 cloves garlic, finely chopped
3 stalks green onions, finely sliced
1 or 2 knob of ginger root, peeled, finely sliced (i used 2 but you can add more or less to taste)
Thai chilies to taste (optional)
2 tablespoons oyster sauce
1 & 1/2 tablespoon sweet soy sauce
Dash of sesame oil
1 tablespoon cooking oil (for the pan)
DIRECTIONS
Add cooking oil to a large pan/wok then toss in garlic, green onions, ginger and chilies; fry until fragrant. Add oyster sauce, sweet soy sauce and sesame oil. Stir to combine. Add shrimp and coat with sauce. Shrimp will cook very quickly (about 3-4 minutes on each side).
Serve hot with rice. Enjoy!

Neutral oil 2 Tbsps
Ginger 3- 4 slices
Garlic 1 Tbsp chopped
Large raw shrimp or prawns (peeled, deveined and PAT DRIED with Paper towel 1 lb.)
Rice or Shaoxing wine 1 Tbsp
Oyster sauce 2 Tbsps
Soy sauce 1 tsps
Sugar 1 tsp
White pepper to taste
Chicken broth 1/2 cup
Red chili pepper 1 chopped or chili flakes 1/2 tsp
Cornstarch slurry (Corn starch 1 Tbsp + cold water 1 Tbsp) Green onion 1 chopped
Steps:
Heat oil on high. Add ginger and garlic. Stir fry till fragrant, stirring constantly.
Add shrimp. Stir fry till slightly pink on the outside. About 50% cooked.
Add rice wine, oyster sauce, soy sauce, sugar, white pepper and chicken broth. Bring to a boil, stirring constantly.
Add chili. Drizzle in cornstarch slurry, stirring constantly.
Stir in green onion. Serve immediately with rice.
Notes:
This dish cooks very quickly over high heat. Prepare all ingredients before starting.
Watch the garlic. It burns easily.
Avoid overcooking shrimp. It usually only takes about 3-5 minutes total, to fully cook shrimp on high heat, depending on their size.
When making cornstarch slurry, mix corn starch and cold water thoroughly till cornstarch completely dissolves. Give it another quick mix right before use.
