How To Make Cookies and Cream Cookies
It’s cookie inception! Soft and chewy Cookies and Cream Cookies stuffed with Oreo pieces!

Ingredients
3/4 cup unsalted butter softened to room temperature (170g)
3 oz cream cheese softened to room temperature (85g)
3/4 cup granulated sugar 150g
1/3 cup light brown sugar firmly packed (70g)
1 large egg room temperature preferred
3/4 teaspoon vanilla extract
2 2/3 cups all-purpose flour 325g
1 teaspoon cornstarch
3/4 teaspoon baking soda
1/4 teaspoon salt
12 Oreos broken into small pieces (I smash mine with a rolling pin)
1/2 cup mini chocolate chips 85g

Instructions
00:00 Introduction
00:26 In the bowl of a stand mixer or in a large bowl and using an electric hand mixer, cream together butter, cream cheese, and sugars.
01:19 Add egg and vanilla extract and beat again until well-combined.
01:57 In a separate, medium-sized bowl, whisk together flour, cornstarch, baking soda, and salt.
02:21 With mixer on low-speed, gradually add flour mixture to butter mixture. Be sure to scrape the sides and bottom of the bowl with a spatula to ensure all ingredients are thoroughly combined.
02:50 Add broken Oreos and mini chocolate chips and use a spatula to stir until well-incorporated into the batter.
04:03 Cover bowl with plastic wrap and chill in the refrigerator for at least 30 minutes.
04:27 When dough has chilled and you are almost ready to bake, preheat oven to 350F (175C). Prepare cookie sheets by lining with parchment paper.
04:35 When oven is preheated, remove cookie dough from fridge and drop cookie dough by heaping 1 ½ Tablespoon-sized scoops onto baking sheet, spacing cookies at least 2” apart.
05:24 Transfer to 350F (175C) oven and bake for 10-12 minutes or until cookies are just beginning to turn golden brown around the edges. Allow cookies to cool completely on baking sheet before enjoying.
Notes
Cookie dough may be refrigerated (covered) for up to 3 days.
Cookie dough may also be scooped and frozen in an airtight container. It will keep in the freezer for several months.
Cookies may need to bake for several minutes longer when baked from frozen.
Store baked cookies in an airtight container at room temperature for up to one week.

BAKING POWDER - 1 TSP

MILK - 3 TBSP ( CAN USE AN EGG INSTEAD OF MILK )

Ingredients
1/2 cup (115 g) + 2 Tbsp (30 g) unsalted butter at room temperature
½ cup (100 g) sugar
1 large egg yolk
1 tsp (5 mL) vanilla extract
1 ¼ (175 g) cup all-purpose flour
¼ cup (30 g) cocoa powder
¼ tsp (1 g) baking powder
¼ tsp (1 g) salt
6 oz (170 g) rolling fondant icing
Directions
1. Beat the butter and sugar until light and fluffy. Beat in the egg yolk and then beat in the vanilla.
2. In a separate bowl, sift the flour, cocoa powder, baking powder and salt. Add this to the butter and stir just until blended. Divide this into 2 discs, wrap and chill until firm, at least an hour.
3. Preheat the oven to 350°F (180°C) and line 2 baking trays with parchment paper. Give the dough one or two kneads on a floured work surface to soften it (this will prevent the dough from cracking when rolling) and then roll it out to just less than ¼-inch (0.6 cm) thick. Cut out cookies using a 2-inch (5 cm) cookie cutter and lift onto the baking trays. Any scraps can be re-rolled, and if the dough gets too soft when rolling, simply chill it for 15 minutes before rolling again.
4. Bake the cookies for about 8 minutes, until they loose any shine to them. Allow the cookies to cool on the tray before removing to fill.
5. Roll out the fondant, using icing sugar for rolling (not flour) to just over 1/8-inch (0.3 cm) thickness and cut 2-inch (5 cm) circles using the same cookie cutter as for the cookies. Brush one side of the fondant with a little water and press this onto the bottom of one cookie. Brush the other side of the fondant with a little water and place the bottom of a second cookie, pressing gently to secure the sandwich. Repeat with the remaining cookies, re-rolling the fondant if needed.
6. Store the cookies in an airtight container for up to 3 days.

How to Make Chocolate Chip Oreo Cookies
Preheated Oven: 188°C (370°F)
Total Bake Time: 15 minutes (18 minutes for frozen cookie dough)
INGREDIENTS
~Cookie Dough~
150 g (5.3 oz) Dark Chocolate
*use chocolate chips, drops or chunks
100 g (3.5 oz) Oreo Cookies
320 g (11.3 oz) All Purpose Flour
1.5 g (1/4 tsp) Salt
9 g (3 tsp) Cornstarch
4 g (1 tsp) Baking Powder
2 g (1/2 tsp) Baking Soda
1 lrg. Egg
2 lrg. Egg Yolk
142 g (5 oz) Unsalted Butter
50 g (1/4 cup) White Sugar
125 g (1/2 cup + 2 tbsp) Brown Sugar
2.5 ml (1/2 tsp) Vanilla Extract
~Toppings~(Optional. Add at the last 5 minutes of baking)
Chocolate
Oreo
*Total cookie dough weight = 1010 g (126 g / 8 pcs.)
*Refrigerate for 30 minutes before baking (Can last in the fridge for 1 week and 2 months in the freezer. Store properly.)
*Bake at a preheated 188°C (370°F) oven for 10 minutes. Take out from the oven to put chocolate and Oreo chunks on top of the cookie and bake for another 5 minutes. Baking time total: 15 minutes. (For baking frozen unthawed cookie dough, bake at 177°C (350°F) for 13 minutes then take out the cookies from the oven to add chocolate and Oreo chunks on top. Bake for another 5 minutes. Total baking time: 18 minutes.)
*Let the cookies rest on the baking sheet for 5 to 10 minutes before transferring them to a wired cooling rack.
