How To make Orange Rice Muffins
1 c Mashed banana
1/2 c Orange juice concentrate
2 tb Oil
1 1/4 c Rice flour
1 1/2 ts Cornstarch-free baking powde
In large bowl mix, bananas, orange juice concentrate, and oil. Add flour and baking powder. Blend well. Fill six 2 1/2 inch nonstick muffin cups 2/3 full. Bake at 375 for 20-25 minutes. Turn out onto a wire rack to
cool. Variations: add 1/2 cup raisins, 1/2 cup sliced almonds, 1/2 cup chopped dates (no sugar), or 1/2 cup well drained crushed pineapple. For apple rice muffins, substitute apple juice concentrate for orange juice concentrate.

Method: Put Some Rice in Half of the Muffin Tray Spaces. Place Muffin Papers in Each Space and Fill With the Muffin Mixture. Note That Where the Rice Was Used the Paper Is Dry, and Where There Is No Rice It Is Covered With Oil.
Healthy Rice Muffins
This is a healthier recipe. My boyfriend wanted to try it out. It's kinda good if you like healthier things but don't expect a real muffin. I liked them. They are great for breakfast.
You need:
250g of cooked rice (brown rice is best)
50g of oatmeal
50g of syrup
2 apples
2 eggs
cinnamon, nutmeg, vanilla extract
2 tablespoons of sugar or stevia
Bake for 20-25 minutes with 180° Celsius.

Cranberry Orange Muffins – BEST Recipe Ever!
These moist cranberry orange muffins are my guilty pleasure which is why I stockpile cranberries in my freezer every winter! They make for a great breakfast or snack and are loaded with juicy cranberries. Hope you love them as much as I do!

Dry:
◾️2 ½ cups all-purpose flour
◾️2 tsp baking powder
◾️¼ tsp salt
Wet:
◾️½ cup unsalted butter, room temp
◾️1 ¼ cup sugar
◾️2 eggs, room temp
◾️1 whole orange juiced and zested
◾️½ cup whole milk, room temp (2% works as well)
Add 2 cups roughly chopped cranberries and bake in oven on 350 for 25-30 min

I know. Lots of people call muffins a breakfast food, but with all the fat and sugar they can pack, aren't they really more like dessert? Not the muffin I'm going to make for you today. The trick is in smart ingredient swaps. Instead of oil, eggs, or milk, this muffin recipe calls for low-fat plain yogurt. Cornmeal adds a great texture, and the blueberries and orange bring a bright, sunny flavor. So good -- and good for you!

Rice Muffins
Ingredients:
150g Sushi Rice (Uncooked weight)
Sesame seeds (optional)
150g Gouda Cheese
50g Sliced Ham
10g Baby Spinach Leaves
Black Pepper.
Instructions:
Cook your sushi rice in 150ml of water and salt for 15 minutes over a gentle simmer then cool.
Spray a 6 hole muffin tin with oil spray and then lay in a strip of baking parchment to each hole to ease removal.
Place some sushi rice in each hole of your muffin tin and using wet hands form into cup shapes.
Add some Gouda Cheese to the base of each rice cup.
Then lay over some baby spinach leaves followed by another layer of sliced ham.
Add in an egg yolk on top of the ham and surround with more Gouda cheese.
Sprinkle with black pepper .
Bake in the oven at 180°C or 350°F for 10 minutes.
