How To make Orange Basil Cookies

orange cake mix

teaspoon
orange, zest, grated

raisins
1/2
cup
walnuts, chopped

tablespoon
basil, dried
Directions:
Mix together the butter, cream cheese, egg yolk and orange juice. Add dry cake mix; stir in orange zest, raisins, walnuts and basil. Chill dough.
Preheat oven to 350 degrees; butter cookie sheets. Roll chilled dough into 1/2-inch balls and place on cookie sheets. Flatten each ball with a fork. Bake for 10 to 15 minutes.
For a bit of artistry, attach a small paper or silk leaf using a dab of confectioner's sugar icing.
Makes 6 to 7 dozen.
Variation: Lemon cake mix and 1 tablespoon frozen orange juice concentrate can be substituted for the orange cake mix and orange juice.

Lemony Basil Cookies - Rise Wine & Dine - Episode 6

Ingredients you need:
1 Cup Fresh Basil Leaves (Processed in a Food Processor)
1 Lemon (Zest & Juiced)
3/4 Cup White Sugar
1/2 Cup Butter (Melted & Cooled Back To Room Temp)
1 Egg
1 1/2 Cups Flour
First Process the Basil Leaves along with the Lemon Zest & Lemon Juice in the food processor until a very nice & smooth consistency.
In a large bowl mix together the sugar & butter until smooth. Then add in the egg and combine again.
Now add to the butter & sugar mixture, the basil, lemon zest & lemon juice. Combine again.
Now into the same bowl stir in the flour. The batter will come together easily if you use a spatula, especially since you can scrape down the inside of the bowl easier now. Make sure all flour is combined totally.
At this point allow the batter to cool in the Fridge for an hour.
Now Scoop the batter into a Tablespoon size and place each ball onto a parchment lined baking pan or a well greased baking pan. Now place the lined cookie sheet into a 350 degree Oven for 10 minutes or until cookies come out golden on the bottom of each.
Allow Cookies to truly cool to enjoy the flavor.
***If you allow the cookies to bake longer then the recommended time, the cookies will be dry and not taste as good in my opinion*** :(
For best results only allow cookies to be stored for up to one week.

100 gr. Lemon Juice
25 Basil Leaves
400 gr. Full Milk / Whole Milk
100 gr. Fine Sugar
3 Egg Yolks (from egg that weighs 58-60 gr. each with shell)
50 gr. Corn Flour / Corn Starch
Choux Pastry
100 gr. Milk
100 gr. Water
100 gr. Unsalted Butter
1/4 tsp. Salt
150 gr. Plain Flour / All Purpose Flour
3 Eggs (weighs 58-60 gr. each with shell)
Preheated Oven At 200°C
Baking Mode: Top and bottom heating elements without fan.
Baking Temperature: 200°C
Baking Time: 20 minutes
Baking time may vary depending on the type and accuracy of your oven.

Soft Lemon Cookies - Melt in your mouth
Lemon cookies are super simple to make and delicious. Made with a combination of lemon juice and zest, they have a tremendous natural flavor. I really enjoy them with a nice cup of tea or glass of milk.

There are a few tips to making these tasty lemon cookies. First, I find the juice from one lemon is about perfect. If you want them more or less lemony, simple adjust the amount of juice accordingly.
I always use a few drops of yellow food coloring to make them really yellow and vibrant. This is totally optional, and you can be the judge.
The zest from one lemon is about perfect form my liking. Just be careful not to zest too far into the lemon as it will become bitter. You only want the zest from the shiny part of the skin.
The amount of sugar and vanilla extract can be altered too. Just be careful not to over power the lemon flavour with vanilla extract.
