12 oz Vanilla wafers 1 lb Powdered sugar; sifted 1/2 c Butter or margarine; soften 6 oz Orange juice concentrate; -thawed 1 c Pecans; finely chopped Flaked coconut (opt) Crush vanilla wafers to make fine crumbs. Add sugar, butter and orange juice concentrate, mixing well. Shape dough into 1-inch balls. Roll balls in pecans or coconut (or a mixture of both). Chill until firm. Makes about 6 dozen. -----

Orange Balls & Potato Candy - My Mother's Recipes | Part 1
The Holidays can make you seek out memories from long ago. Back when times were simpler and families got together more often. I'm feeling nostalgic these days and I pulled out my mother's old recipe box. Going through the cards and remembering some of her Christmas candies got me longing for these sugar filled memory makers. Today I am making 2 that I remember well. From the 1970's era. Orange Balls: 11 ounces box Nilla Wafers Vanilla Wafer Cookies (crumbled) 1 stick Butter (melted) 6 ounces Orange Juice Concentrate (I used half a 12 ounce size) ½ cup Chopped Pecans 2 cups Confectioner's Sugar 3 cups Flaked Sweetened Coconut You can combine with your hands and a spatula or use a mixer. Add the butter and nilla wafers together and combine until wafers are all covered in butter. Add 6 oz orange juice concentrate (partially thawed helps) and 1/2 cup chopped pecans. Stir until combined. Add 2 cups of confectioners' sugar and mix until sticky dough ball forms. Line a baking sheet with parchment paper then use a one inch scoop to form orange balls, placing them on the lined baking sheet. Next, after all of the balls are formed, gently roll them in the flaked coconut to coat and transfer the orange snowball back to the lined baking sheet; repeat until all are coated. Refrigerate the orange snowballs until ready to serve. These need to stay chilled. You can freeze them as I did and pull out of freezer the day you are serving and keep in the refrigerator.
Potato Candy: ½ cup Potatoes (usually 1 medium potato cubed and boiled with no seasonings! Drain water off potatoes and cool) 1 stick softened butter 7 cups (I used 8) Powdered Sugar (plus additional for dusting) 1 tsp Vanilla Extract creamy Peanut Butter (for filling) Combine mashed potatoes, butter, and 2 cups of sugar in a large bowl and use an electric mixer or hands to stir until combined. Add remaining sugar, 1 cup at a time and stirring until combined after each addition. Once you've added 6 cups of powdered sugar, check the consistency. If the dough is not moldable in your hands and can't be rolled into a ball, continue to add sugar until it is firm. Stir in vanilla extract. Refrigerate for at least 1 hour (if you chill longer it may become too firm and brittle and will just need to sit at room temperature for 10-15 minutes until it is pliable). Once chilled, divide dough into two pieces and place one piece on a clean surface that you've generously dusted with powdered sugar. Dust the surface of the dough with additional sugar, and use a rolling pin to roll dough out into a rectangle about ¼ thick. If your dough is too sticky or falling apart, you may need to add more sugar, re-shape it into a ball, and start over. Once dough has been rolled into a ¼ thick rectangle, spread evenly with peanut butter, leaving a small amount of space peanut butter-free around the perimeter of the dough. Starting with the longer side of your rectangle, gently but tightly roll into a log. Use a knife to slice into pieces about ¼-½ thick. Repeat steps 5-8 with remaining half of dough. Store in the refrigerator for up to a week. This can be frozen for up to 3 months. When getting ready to serve, thaw in the refrigerator.

Orange Balls
1 Stick of melted butter 1 12 oz package vanilla wafers (crushes) *don't use bargain wafers, my friend did this and the recipe tasted awful* 1 lb box powdered sugar (or way less, IMO) 1 C pecans, finely crushed 1 6 oz can froze OJ concentrate 1 can grated coconut
combine all ingredients but the coconut. Roll into balls. Roll through coconut. Keep refrigerated if they're not sitting out to be devoured. :D

MINI PROTEIN CHOCOLATE ORANGES
These have only three ingredients and are so easy to make! They also have a whopping 15g of protein and fats per ball and a measly 8g of carbs!
To make these, all you need is the following:
200g Dr Zak's Chocolate Orange Peanut Butter 50g milled chia seeds 2 tbsp raw cacao powder
Mix it all up in a bowl, roll into six balls and enjoy!
