1 leek (about 5.5 ounces/160g), thinly sliced
1/3 sweet onion (about 2.5 ounces/70g), chopped
1 small broccoli crown (about 5.5 ounces/160g), finely chopped
2 zucchini (about 12.5 ounces/350g), shredded
1/2 cup (120ml) nondairy milk
1/2 lemon, juiced
2 1/2 cups (300g) all purpose flour
1 tablespoon (12g) baking powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 tablespoon (5g) nutritional yeast
2 egg replacers
1/3 cup (80ml) neutral oil (canola, vegetable)
Everything but the Bagel seasoning, for topping
Spray oil

Baked bread onions and zucchini
I have to say these were fantastic! Potato Strong uses a wet batter and I liked the idea. So I gave it a try today along with using zucchini. I got the zucchini idea from Nini Girl but she used the traditional 3 step breading method (flour, nondairy milk, bread crumbs). I have linked both videos below. I used 1 cup of whole wheat flour and just enough water to make a thickish batter (wasn't even 1 cup of water). I used some Italian bread crumbs I had in my pantry. I will continue to make this recipe but use plain crumbs so that I can change up the flavor of the batter! Thanks Potato Strong and Nini Girl!

Scarpaccia: the delicious zucchini recipe to try
INGREDIENTS
700g of zucchini
1 onion
10g (1/2 tbsp) of salt
Pepper
120g (1 cup) of all-purpose flour
30g (1/4 cup) of corn flour
Extra virgin olive oil
Rosemary
METHOD
Cut the zucchini into the circles and onion and transfer into the bowl. Season with salt and pepper and put a weight on it to make the vegetables lose the vegetation water. Set aside for 2 hours.
After 2 hours, drain all the vegetation water into a bowl and prepare a batter by adding the flour, corn flour, and a drizzle of oil.
Pour the batter over the vegetables and mix well.
Pour everything into a well-oiled non-stick pan and, with the help of parchment paper, level well with your hands (the ideal pan is 30X30 in size).
Sprinkle with rosemary, drizzle with olive oil and bake in the oven at 220°C/428°F for 30 minutes.

❗Before grinding the zucchini it’s enough to cut just one end of it. Grab zucchini uncut end and start grinding the cut end. Ones you finish you will have the uncut end in your hand so this way you will not lose the last slice ????
❗For the topping you can use the vegetables you like, for example mushrooms, bell pepper etc.

????Ingredients :
1 large zucchini
1/4tsp salt
1 tomato
4tbsp gram flour
10g parsley
1 garlic clove
1tsp onion flakes
1 cup fresh spinach
plant-based mozzarella cheese
olive oil
????Method:
Grate 1 zucchini.
Season with 1/4tsp of salt.
Mix well and set aside for 10 minutes.
Cut 1 tomato into half moon slices.
Squeeze grated zucchini over a bowl to remove excess water.
Transfer the mixture into a mixing bowl.
Add 4tbsp gram flour.
Chop 10g fresh parsley and 1 garlic clove and add to zucchini mixture.
Mix in 1tsp onion flakes.
Add salt to taste.
Stir well until all the ingredients are combined.
Transfer the mixture into a greased frying pan and spread out into a circle.
Fry on a low heat covered with a lid for about 7 minutes or until the bottom is crispy brown.
Flip it gently to other side.
Then add topping. I used 1 cup fresh spinach and tomato.
Add grated plant-based dairy free mozzarella cheese.
Fry for another 5 minutes.
Sprinkle with fresh chopped parsley and chilli flakes.
Serve immediately and enjoy!????

REZEPT UND ZUTATEN:
2 Zucchini.
Salz.
Lassen Sie die Zucchini 15 Minuten ziehen.
2 große Kartoffeln.
Wasser.
Kartoffeln 10 Minuten ruhen lassen.
1 Zwiebel.
Olivenöl.
1 Karotte.
Gut mischen.
Mit einem Deckel abdecken und 5 Minuten garen.
2 Paprika.
Fein hacken.
Mit einem Deckel abdecken und weitere 3-5 Minuten garen.
Wasser aus Zucchini entfernen.
Vergessen Sie nicht, das Gemüse umzurühren!
Wasser aus den Kartoffeln entfernen.
Gemüse ist fertig.
Mais 200 gr. / 1 Tasse.
Schnittlauch.
Petersilie.
2 Eier.
Salz. Schwarzer Pfeffer.
Gut mischen.
Mehl 200 gr. / 1 Tasse.
Mehl nach und nach zugeben.
Gut mischen!
Sonnenblumenöl.
Die Mischung gut verteilen.
Im Ofen bei 200°C (400°F) 30 Minuten backen. Käse 100 gr. / 1/2 Tasse.
Mayonnaise 2 Esslöffel.
Griechischer Joghurt 3 Esslöffel
Knoblauch.
Dill.

A delicious, easy-to-make, moist zucchini bread recipe, with freshly grated zucchini.
INGREDIENTS
450g flour
1 Zucchini
1 Red onion
2 eggs
1 tsp Salt
1/2 tsp Black pepper
1 tsp Paprika Flakes
1 tsp Baking Powder
100ml Water
Frying oil
METHOD Grate the zucchini, mix with onion, eggs, salt, pepper and paprika flakes
Add flour, baking powder, knead and then add water.
Make 8 balls, roll them and fry in a pan in oil for 3-4 minutes on each side
