How To make Onion Zucchini Quick Bread, Tried
1 lg Zucchini (1/2lb), shredded
2 1/2 c All-purpose flour
1/3 c Grated parmesan cheese
1 1/3 c French's French Fried Onions
-2.8 ounce can 1 T Baking powder
1 T Chopped fresh basil
OR 1 t Dried basil leaves
1/2 t Salt
3/4 c Milk
1/2 c Unsalted butter, melted
1/4 c Packed light brown sugar
2 lg Eggs
Preheat oven to 350 degree F. Grease 9x5x3-inch loaf pan Drain zucchini in colander. Combine flour, cheese, French Fried Onions, baking powder, basil and salt in a large bowl. Combine milk, butter, brown sugar and eggs in a medium bowl; whisk until well blended. Place zucchini in kitchen towel; squeeze out excess liquid. Stir zucchini into milk mixture. Stir milk mixture into flour mixture, stirring just until moistened. Do not over mix. (Batter will be very stiff and dry.) Pour batter into prepared pan. Run knife down center of batter. Bake 50-65 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove bread from pan to wire rack; cool completely. Cut into slices to serve. Note: 1 1/4 c. whole wheat flour can be substituted for the all-purpose flour. For optimum flavor, wrap bread overnight and serve the next day. This bread is excellent toasted. Zucchini - 350 grams
Potatoes - 480 grams
Bell pepper - 125 grams
Garlic - 1 teaspoon
Bread crumbs - 75 grams
Olive oil - 60 milliliters
Salt - 1 teaspoon
Black pepper - 1 teaspoon
PREPARATION
1. In a mixing bowl, add all the ingredients and mix it well.
2. Transfer them on a baking tray.
3. Preheat the oven to 400°F/200°C. Bake for 1 1/2 hours.

Baked bread onions and zucchini
I have to say these were fantastic! Potato Strong uses a wet batter and I liked the idea. So I gave it a try today along with using zucchini. I got the zucchini idea from Nini Girl but she used the traditional 3 step breading method (flour, nondairy milk, bread crumbs). I have linked both videos below. I used 1 cup of whole wheat flour and just enough water to make a thickish batter (wasn't even 1 cup of water). I used some Italian bread crumbs I had in my pantry. I will continue to make this recipe but use plain crumbs so that I can change up the flavor of the batter! Thanks Potato Strong and Nini Girl!

ZUCCHINI TOAST
INGREDIENTS
1 zucchini with skin
1 large onion
3-4 cloves of garlic
3 green chilies
1 tbsp all purpose flour
1 boiled potato
20 grams paneer
1/2tsp red chili powder
Salt according to taste
1/4 tsp garam masala
1/2 tsp black pepper powder
Bread crumbs
Oil

METHOD
Firstly cut onion, garlic and green chili then grate the zucchini. Take a pan and drizzle some oil then add onion, garlic and green chili saute until the onions become transparent then add the grated zucchini and cook the mixture then add 1 tbsp of all purpose flour and cook until the flour is coked and the mixture starts sticking to the pan.
Take a bowl and add boiled potato, paneer and the zucchini mixture prepared give it a good mix and add the spices to the mixture and give it a good mix until it is well combined.
Take toasted bread and apply the mixture to the bread on one side and then spread some bread crumbs and apple it on the mixture then drizzle some oil on the tawa and put the bread with mixture side down and let it cook for 2-3 minutes and then remove the toast and cut the it into your desired shape and serve hot.
