I like Velveeta salt and pepper Saute slice scallion in margarine, until soft. Beat egg with water and lemon thyme, add salt and pepper and pour over cooked scallion. Allow to cook until top is set. Lay cheese over !/2 of egg mixture, allow to melt briefly, fold omelet in half and slide onto serving plate. Garnish with a sprig of lemon thyme. Serve with Herb Peasant Bread, toasted.
Kurkure (1 packet) tomato - 2tbsp onion- 2tbsp Green chilli- 1tbsp Egg - 2 Salt to taste

3 Egg Omelette
3 Eggs 2 x Spring Onions 10g x Butter 20g to 30g x Cheese (of your choice) Pinch of Salt & Pepper
1. Crack 3 eggs into a bowl along with a pinch of salt and pepper. Whisk together.
2. Finely chop the spring onions.
3. Place 10g of butter into a nonstick frying pan over low heat.
4. Once melted, add the eggs into the pan and swirl around using a wooden spoon or spatula. Once curds form, stop stirring and grate in 15g to 20g of cheese and add half of the spring onions.
5. Fold the omelette over and turn out onto a plate. Finish by grating a bit more cheese and sprinkle the rest of the spring onions over the top.
