When TAK was an at-home bakery, I made thousands of these cookies. They were a holiday staple for my customers and they’re still a holiday staple in our home. Now, they can be one in yours!
Their salty-sweet nature makes them absolutely addictive. And that soft, chewy interior in combination with that crunchy sugar on top just cannot be beaten!
So we’re going to start with the cookie dough, I’ve got lots of great tips for y’all along the way so be sure to watch the video to the end!
INGREDIENTS:
* 2 1/2 cups all-purpose flour
* 2 teaspoons ground ginger
* 1 teaspoon ground cinnamon
* 1 teaspoon baking soda
* 1 teaspoon fine sea salt
* 1/2 teaspoon ground cloves
* 1 cup light brown sugar packed
* 3/4 cup + 2 tablespoons canola oil
* 1/3 cup dark molasses
* 1 large egg
* 1/2 cup coarse sugar crystals if desired
HOW TO MAKE GINGER MOLASSES COOKIES
1. Whisk together flour, baking soda, and spices.
2. Mix brown sugar, molasses, oil, and egg.
3. Add dry ingredients to wet ingredients.
4. Scoop, roll in sugar, and bake!

Apricot Butter Cookies - the Perfect Adult Ice Cream Sandwich
Milk and cookies may be for kids, but my Apricot Butter Cookies are for the adults. Easy to make even for non-bakers like me. I’ll show you how these little cookies are the perfect ending for your celebration meal. Watch to the end to see how to make the perfect adult ice cream sandwich with the apricot butter cookies.

1 cup softened butter (225 gr)
3/4 cup powdered sugar (115 gr)
1 teaspoon vanilla extract (5 ml)
1 1/2 cup all purpose flour (193 gr)
1/4 cup finely chopped dried apricots (35 gr)
Preheat your oven to 350° F (177° C)
In a large bowl, combine the butter, sugar and vanilla.
Beat with an electric mixer until smooth.
Add in the flour in parts, and mix to combine.
Once the flour is incorporated, add the apricots. Mix until just combined.
Shape the dough into 1 inch balls. (A small ice cream scoop works the best, or use a measuring spoon.)
Place the dough 2 inches apart on an ungreased cookie sheet.
Bake for 8 to 12 minutes or until the bottoms are light golden brown.
Cool for 1 minute, then remove from the cookie sheet onto a cooling rack. Cool for another 30 minutes.

These cookies are made from my Grandma's actual recipe from the 1930s.
You will need:
The Cookies
2 cups granulated sugar
1 cup shortening (like Crisco)
2 large eggs
2 teaspoons vanilla
1 cup milk
6 teaspoons baking powder
1 teaspoon kosher salt
6 cups all-purpose flour
The Date Filling
8 ounces pitted dates, chopped
1/3 cups granulated sugar
1 tablespoons flour
1 cups water

1 egg
50 g sugar
150 g old-fashioned rolled oats
150 g flour
120 g melted butter
100 g any dried fruit (I mixed raisins, apricots, candied orange peel)
1 tsp vanilla sugar (or vanilla extract)
1 tsp baking powder
1/4 tsp salt

Apricot preserve recipe:
1. Boil some water along with 50 gms apricot and 20 gms sugar
until soft.
2. Cool the mixture and blend it. Use as required.

The softness of the cookie may depend on how long it is baked.
Points to remember:
1. cream (mix) the butter and sugar until smooth and fluffy.
2. Add little by little egg. Adding too much egg will curdle the
mixture.
3. Fold the flour mix gently. Do not overmix.
4. Bake at the correct temperature.
