Recipe for Cranberry Oatmeal Walnut Cookies
Preheat oven to 375 degrees F
1/2 cup butter softened (1 stick)
1/2 cup firmly packed light brown sugar
1/4 cup granulated sugar
1 egg
1/2 tablespoon vanilla
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup dried cranberries
½ cup chopped walnuts
¾ cup uncooked quick-cooking oats
1. Beat butter at medium speed with electric mixer until creamy.
2. Gradually add sugars, beating well.
3. Add egg and vanilla, beating until blended
4. In a separate bowl, combine flour, baking soda, baking powder and salt.
5. Gradually add to butter mixture, beating until blended
6. Stir in cranberries, nuts, and oats
7. Drop dough by heaping tablespoons 2” apart on greased baking sheet
8. Bake 10 minutes or until lightly browned
Transfer to wire racks to cool completely
Yields 2 dozen

Cranberry Oatmeal Cookies Recipe | The Sweetest Journey
Learn how to make oatmeal cookies with the sweet addition of cranberries.
Ingredients:
3/4 Cup Old Fashioned Oats (60g)
3/4 Cup All Purpose Flour (105g)
1/2 Teaspoon Baking Soda (2.5g)
1/3 Cup Butter or Margarine (67g)
1/3 Cup Brown Sugar (70g)
1 Egg
1 Cup Dried Cranberries (160g)
Directions:
1. In one bowl, whisk together the oats, flour, and baking soda. Set aside.
2. In another bowl, cream together the sugar and butter until light and fluffy. Add the egg and mix until well combined. Add the dry ingredients to the creamed mixture in two additions, mixing well after each. Fold in the dried cranberries.
3. Measure the batter for each cookie using a round teaspoon and place on a lined baking sheet. Bake at 375°F for 10 minutes or until cookies are golden brown. Let cool completely on a wire rack.

We're making oatmeal cranberry cookies! These delicious cookies are loaded with pecans as well as white chocolate chips. It's that time of the year when fellow bakers like myself are gearing up for their annual holiday baking extravaganza! And what better way to kick start the baking season than with this holiday cookie staple!

Ingredients:
1 cup butter, room temp
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
3 cups old fashioned oats
1 cup dried cranberries, chopped
1 cup pecans, chopped
1 cup white chocolate chips
Directions:
To a big mixing bowl, add in the butter and sugars. Mix until smooth and creamy. Add in the eggs and vanilla extract. Mix, mix, mix!
Add in all of the dry ingredients, mix until combined. Next goes in the cranberries, pecans and white chocolate chips. The dough will be very thick and somewhat difficult to handle by now. Lastly, add in the oatmeal, at which point I like to switch to a spoon for mixing.
Using a cookie scooper, scoop out about a tablespoon's worth of dough, roll it into a ball and place it on a parchment lined baking sheet. Leave a little room for spreading.
Into the oven at 350 degrees for 10-12 minutes or until the edges are golden brown. Let your cookies cool for 1-2 minutes before attempting to move to a cooling rack. Store in an air tight container! Enjoy!!
