How To make Oatmeal Cookies with Raisins and Walnuts
2/3 c Butter or margarine; soft
2/3 c Sugar
1/2 c Dark brown sugar; packed
1 lg Egg
1 ts Vanilla
3/4 c Flour
1 1/4 c Quick oatmeal; raw
1 c Raisins
1 c Walnuts; coarsely chop
Heat oven to 325. Lightly grease two 17x14 inch cookies sheets. In a large bowl of electric mixer, beat butter, sugars, egg and vanilla at medium-high speed until fluffy. Reduce mixer speed to low, add flour and oatmeal, increase mixer speed gradually and beat just until blended. Stir in raisins and nuts. Drop heaping tablespoonfuls of dough 2 1/2 inches apart onto prepared sheets. Bake 1 sheet at a time 17 minutes or until edges of cookies are lightly browned and tops look dry. Cook on sheet on wire rack 5 minutes. Remove to rack to cool completely. -----

Best Oatmeal Raisin cookies recipe
Best ever!
Ingredients:
Soak 1 cup (155g) raisins in a bowl with 3 beaten eggs, 1 t Vanilla and 1 t Cinnamon for one hour.
In a separate bowl, cream 1 cup (240g) butter with 1 cup (220g) brown sugar and 1 cup (200g) white sugar.
Add 1 t salt and 2 t baking soda.
Stir in 2 1/2 cups ( 350g) flour.
Add the raisin mixture. Mix again.
Add 2 cups (200g) regular rolled oats or quick oats. If you use old fashioned oats, then “pulse” in a food processor/ blender 5-7 times for best results. Pulsing the oats will make them “finer”, therefore they will cook faster like quick oats.
Optional 3/4 cup (68g) walnuts or pecans.
Bake 350*F or 180*C
10-12 minutes

Today I’m making cookies that explode with flavor -
Chocolate Oatmeal Raisin Walnut COOKIES Recipe:
½ cup brown sugar
½ cup white sugar
½ cup melted butter
1 egg
¼ tsp nutmeg
½ tsp kosher salt
½ tsp cinnamon
½ tsp baking soda
1 tsp water
1 tsp vanilla extract
1 ¼ cups flour
½ cup raisins
½ cup rolled oats
⅓ cup chopped walnuts
1 cup chocolate chips
I’ll start by creaming ½ cup of brown sugar, ½ cup white sugar and ½ cup melted butter. I’ll mix it well then add in 1 egg. Then mix again!
Now to add in some flavor. I’m starting with ¼ tsp nutmeg, ½ tsp kosher salt, ½ tsp cinnamon and ½ tsp of baking soda. To activate the baking soda I’ll add in 1 tsp of water and 1 tsp of vanilla extract, then mix again.
Finally the dry ingredients. 1 ¼ cups of flour, ½ cup raisins, ½ cup rolled oats, ⅓ cup chopped walnuts, and 1 cup chocolate chips. I’ll mix everything again and they’re ready to be scooped and baked. Me so hungry for cookie!
In an oven preheated to 350º F, I’ll bake them for 10-12 minutes until they’re nice and golden brown. Hey Siri, check the timer for cookie. Once they’re ready I’ll take them out and let the cookies cool for about 5 minutes then serve with a nice tall glass of milk. Ahhhh!
