Hi, I’m Amy! Here in my kitchen, I share recipes that are light in calories but full of flavor. They’re delicious AND nutritious—because you shouldn’t have to choose! In today’s video, I’m showing you how to make my Healthy Carrot Cake Oatmeal Cookies! They’re really soft and chewy, with the same sweet and cozy flavors as traditional carrot cake, but these healthy cookies are easier to make… And they’re only 96 calories!
Just how easy is this healthy oatmeal cookie recipe? Well for starters, you don’t need a stand mixer or electric mixer! You just need a whisk and a fork. And you probably have most of the ingredients in your pantry already!
While we bake these healthy cookies, you’ll learn how to make sure your oatmeal cookies turn out chewy (not cakey!) and why fresh carrots are the key to making great cookies. You’ll also learn how to make sure your cookies spread while baking, as well as how to make perfectly round cookies. (Hint: No special equipment needed!)
I shared these cookies with my neighbors, and their two-year-old immediately grabbed one and gave me a huge hug! So… These healthy cookies are definitely kid-friendly! And they’re treats you can feel good about indulging in because they contain no refined flour or sugar!
Although I use whole wheat flour, it’s easy to make these healthy oatmeal cookies gluten-free with a good gluten-free flour blend. (I share more on that in the Notes section underneath the Instructions in the recipe on my website!)

These vegan carrot oatmeal cookies are easy to make, and have the added benefit of veggies in the form of carrots. Carrots are one of the richest natural sources of vitamin A and beta-carotene, an essential nutrient for eye health, immune function, and much more.
If you're curious about how to make vegan cookies (i.e., what makes cookies vegan), the main thing is not using dairy or eggs in your recipes. Instead of eggs you'll use a combination of flaxseed and water in this vegan cookie recipe. This creates a binding agent that helps to hold these oatmeal carrot cookies together. An added bonus is that compounds in flaxseed can be helpful for those with estrogen-driven breast cancer and may help reduce menopausal symptoms such as hot flashes.
You'll love the delicious aroma of old fashioned carrot cookies when you add in the ground cinnamon. Be sure to use Ceylon cinnamon (real cinnamon) which is loaded with antioxidants and helps lower blood sugar levels and inflammation.
