Cookie swap recipe: How to make chocolate oatmeal cookies (with walnuts)
It's the cookie swap party time of year. Luckily, I have a go-to: Chocolate Oatmeal Cookies with Walnuts.
To me, it's not dessert if it doesn't have chocolate in it. (Or, it's not as good of a dessert as it COULD be IF it had chocolate).
I love this cookie. It's not only got cocoa powder in the dough, it's also got glorious chunks of dark chocolate within. And oatmeal. And walnuts. Dang, this recipe is great.
I got it from the fantastic food website, Food 52 (food52.com), and it's a recipe of one of the co-founders, Amanda Hesser. (Side note: Amanda is one of the most awesome women I've met in this industry. She rocks).
Here's the recipe, per food52.com:
1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable shortening
1 cup sugar
1 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup regular rolled oats
1 cup coarsely chopped dark chocolate
1 cup chopped toasted walnuts
-Heat the oven to 350 degrees. Line 2 baking sheets with parchment paper. Sift together the flour, cocoa, baking soda, and salt.
-Beat the shortening and sugars in a large bowl just enough to blend well. Add the eggs and vanilla and beat until thoroughly mixed. Add the oats and chocolate, and mix again. Add the flour mixture, mixing well. Stir in the nuts.
-Drop the dough by tablespoonfuls onto the parchment-lined baking sheets, 1 1/2 inches apart. Bake until toasted on the edges but still moist in the center, about 12 minutes. Transfer to racks to cool.
I hope you guys like them as much as I do!!
