Whole Wheat Peanut Butter Banana Waffles recipes
Today, March 25, is International Waffle Day and we're celebrating with not just another old waffle recipe. These whole wheat peanut butter banana waffles use crunchy peanut butter which gives them a wonderfully nutty texture.
It's just like eating banana bread for breakfast but in waffle form -- and you get to amp it up some more with toppings or syrup!

Buckwheat Waffles with Maple Bacon | Everyday Gourmet S10 Ep21

Mixing Pancakes the Perfect Amount
Pancakes (yield: 1 dozen pancakes)
2 c (280g) AP flour
1/4 c (50g) maple sugar
1 tbsp (12g) baking powder
1/2 tsp (3g) baking soda
1/2 tsp (3g) fine salt
1.5 c (341g) milk
2 eggs
1 tsp vanilla extract
2 oz (57g) melted butter or vegetable oil
1. Mix all the dry ingredients together in a bowl.
2. In a separate container, whisk together the milk, eggs, and vanilla. Add in the melted butter or oil.
3. Combine the dry and wet ingredients and mix just until you can't see dry flour (there will be some lumps).
4. Scoop onto a lightly greased griddle, cook until the bottom is golden, flip, and cook until golden again.
Plant Based Oil Free Almond Walnut Waffles
Plant-Based Oil Free Almond Walnut Waffles

1 ¼ cups spelt or whole wheat pastry flour
½ cup almond meal
½ teaspoon baking powder
Pinch of sea salt
2-3 tablespoons turbinado sugar (or date sugar)
½ teaspoon cinnamon or 1 tablespoon Fresh Jax Maple Cinnamon sprinkle
1 cup almond milk (or vanilla almond milk)
½ cup apple sauce
1 tablespoon maple syrup
1 flax egg (1 tablespoon ground flax seed mixed with 3 tablespoons water)
½ cup ground walnuts
Mix the spelt flour or whole wheat pastry flour, almond flour, baking powder, sea salt, sugar and cinnamon together and use a whisk to mix it together well.
In a separate bowl, combine the almond milk, apple sauce, maple syrup, and flax egg and mix well. Add all the dry ingredients, except walnuts, to the wet ingredients and mix until just combined well. Don’t overmix. Add the walnuts and stir.
Heat the waffle iron. Place about ½ cup or more batter on the hot waffle iron (depending on the size of your waffle iron). Cook about 3 minutes per side.
Serve with sliced strawberries, blackberries, sliced almonds, unsweetened cashew yogurt, and oil free granola sprinkled on top.
