Recipe:
2 salmon fillets
3 tbsp soy sauce
2 tbsp dijon mustard
1 tbsp maple syrup
2 cloves garlic
1/2 cup olive oil
Mince garlic and place in bowl. Add soy sauce, dijon mustard, and maple syrup. With a whisk in one hand, pour in the olive oil with the other while stirring the mixture. Stir quickly until emulsified. Take a marinating brush and brush on both sides of salmon fillets. Set in fridge for 10-15 minutes.
You can clean your grill with an onion using its oil. Dip in canola oil and grease the grill to prep. See example in the video.
Grill salmon fillets on both sides for about 6 minutes on each side. Constantly brush more marinade on while it's cooking.
Pair with a salad, potatoes, rice, etc

Smoked sockeye
Fish size 2-5 lbs
Recipe Dry Brine
3/4 cup salt
3 cups dark brown sugar
17 hours in the brine. Rotate fish once
Smoke 110-140 degrees no more than 150
5-7 hours

This is How I get PERFECT Smoked Salmon EVERY Time
This delicious smoked salmon recipe is brined in a wet brown sugar and citrus brine then finished with a sweet orange glaze for incredible flavor. The taste of this smoked salmon is amazing, and you can serve it hot or cold.
Smoked salmon is a process where fresh salmon is either cold or hot smoked. Hot smoking is where the salmon is smoked at temperatures between 120° and 180° until the desired internal temperature is achieved. You can also hot smoke the salmon for several hours if you plan to wrap it, cool it, and serve it cold after several days, but the texture can be dry.
The other method is cold smoking which smokes at temperatures between 70° and 90° for several hours and even up to a few weeks. If smoking for several weeks, it turns the fish into salmon-jerky. If you brine the salmon and cold smoke it for several hours, you will get something known as lox.
My smoked salmon recipe is known as kippered salmon. This method is brined and hot smoked and can be served hot or cold. I prefer to cook it to 140° to 145° internally because I like to eat it warm.

Ingredients for this recipe:
• 3 cups water
• 2/4 cups packed light brown sugar
• 1/3 cup sea salt
• zest of 1 orange
• zest of 1 lemon
• 4 to 4 ½ pound side of salmon
For the Glaze:
• ½ cup brown sugar
• Juice of 1 lemon
• Juice of 1 orange
• ½ stick unsalted butter
• 1 tablespoon soy sauce
Fish Grilling Tips & Cedar Planked Salmon Recipe
Many people don't like grilling fish. It's a lot more difficult than dropping a burger on the grill. Fish often falls apart, sticks to the grill, and can cook too quickly. Cedar plank grilling changes all of that. Cedar planks are available at Williams Sonoma, Cost Co, in many supermarkets, and online. They are untreated, safe for food contact, and make grilling salmon steaks a breeze! Just soak the cedar plank in water for a couple of hours before you grill to keep it from burning. Full recipe is below, but watch this video for all of Elizabeth's tips and tricks for getting the perfectly grilled salmon steak.

Cedar Planked Salmon with Dill Sauce Recipe

CEDAR PLANKED SALMON
1 cedar plank
½ side of salmon fillet
4 tablespoons honey
1 tablespoon lemon juice
1 tablespoon olive oil
Kosher salt and pepper
Soak the plank in water for 30 minutes. Put the salmon on the cedar plank. Season with salt and pepper, drizzle the honey, lemon juice and olive oil on top of the salmon. Heat the grill. Place the salmon on the plank on top of the warm grill. Cover the grill and cook for about 15 minutes or to desired doneness.
Serve with dill sauce.
