Apple Spice Cauliflower Muffins Recipe

Ingredients:
+ 1 & 1/3 cups vegetable oil
+ 3 cups flour
+ 1 tsp cinnamon
+ 1 tsp baking soda
+ 1/2 cup brown sugar
+ 3 eggs
+ 2 & 1/2 cups chopped apples
+ 1 cup cauliflower puree
+ 1 tsp vanilla extract
+ 1 tsp nutmeg
+ 1/2 cup grated carrot
Here are the steps:
1. Set your oven to 190°C
2. Steam the cauliflower first then puree
3. Mix together the eggs and vegetable oil
4. Add the cauliflower puree into the mixture
5. Add the vanilla extract and shredded carrots
6. Add the flour, brown sugar, baking soda, nutmeg and cinnamon
7. Mix everything together well
8. Mix in the chopped apples
9. Pour the mixture into cupcake tins
10.Bake for 20 mins or until golden brown
