How To make Nasi Goreng (Indonesian Fried Rice)
2 c Long-grain rice
4 c Chicken stock or water
1 tb Cooking oil
1 md Onion; peeled and chopped
1 Celery stalk; chopped
2 Garlic cloves
peeled and chopped 1/2 ts Grated fresh ginger
1 tb Sambal oelek*
1 ts Java curry
1 tb Kecap manis**
2 Green peppers; chopped
1 c Shredded cabbage
6 lg Fresh shrimp (opt'l.)

peeled and deveined -- cut in quarters 1 c Diced, cooked chicken or
-ham or pork or lamb Salt; to taste *Hot pepper sauce. **Sweet soy sauce. Cook rice in water or chicken stock for about 25 minutes, until slightly underdone. Refresh under water and pat dry. Can be done in advance, along with the vegetable chopping. In large saucepan or wok, heat oil and saute onion until soft, always stirring. Add celery, garlic, ginger, sambal, curry and kecap manis; saute 2 minutes. Add green pepper and cabbage; saute 3 minutes more. Add shrimp and chicken, ham, pork or lamb and saute 2 minutes. Add rice and continue to saute until light brown. Adjust seasoning. Enright writes: "Serve with a light beer or ginger tea to quench the inevitable thirst fired by sambals. 'Nasi Goreng' is Indonesian style Stir-fried rice. This is my super easy nasi goreng recipe for Indonesian fried rice with chicken and prawns and topped with a crispy Asian fried egg!
Nasi Goreng is popular not only in Southeast Asia but throughout the world. And no wonder - it packs a punch of flavour but is incredibly versatile and is great when you have a lot of odd leftover ingredients, especially cooked rice but also bits of roast chicken or char siu. Even better, you can use what vegetables you have in the fridge to make this delicious fried rice dish.
Indonesian fried rice differs from traditional chinese fried rice in 2 respects. Firstly, it is sweet and secondly it is spicy. The sweetness usually comes from sweet soy sauce or 'Kecap Manis' which is soy sauce sweetened with palm sugar. The spiciness comes from chilli sauce or 'sambal' and there is a lot of variation. In fairness, kecap Manis and sambal are widely available from the major supermarkets but I'll be making my nasi goreng using alternative ingredients which most people will already have in their cupboards.
The best thing about this stir fried rice dish is that you can easily prepare and cook it in less than half an hour.

He makes it expertly, sauteeing garlic and shallots in hot oil before adding egg, rice, and all the seasoning. Because we’re in Indonesia, you can take your nasi goreng to the next level with huge amounts of fiery chili sambal chili sauce, and even a little red tomato sauce to give you fried rice color and extra flavor. The thing that truly sets Nasi Goreng Cak Moo is how he fries your rice perfectly and dry in the wok so it’s extremely smoky!
No doubt, this was one of the best plates of Indonesian fried rice that I’ve ever had!

Alright gangstas lets cut the shit and end this egg fried rice shaming. There are so many different ways you can do fried rice, many different cuisines behind it too.
BUT when it comes down to just pure flavour and complexity, this for me is top tier. Sweet, salty, smokey and spicy with a hint of funkiness/msg from our sambal.
This is MY take on the nasi goreng.
There's no chilli jam, but there is sambal.
No MSG, but there is sambal (which has MSG in it from the chicken powder)
No peas and carrots, but there is sambal.
No Uncle Roger, but there is sambal.
Look, whichever way you look at it. This IS the best fried rice, it's got way more flavour and so much more fun to eat.

Ingredients:
900 g (nearly 2 lb) of Cooked and Cooled Rice
4 tbsp vegetable oil
2 shallots or 1 small onion - peeled and thinly sliced
2 tsp cornflour/cornstarch
¼ tsp salt
1 tsp shrimp paste
2 cloves garlic - peeled and minced
1 red chilli - chopped finely
1 tsp fish sauce
1 heaped tbsp brown sugar
1 tsp tamarind
1 tbsp tomato puree/paste
2 tbsp dark soy sauce
5 spring onions - scallions chopped
5 eggs

How To Make Nasi Goreng At Home
Ingredients:
Sweet Soy Sauce
¼ cup soy sauce
4 tbsp brown sugar
Nasi Goreng
2 tbsp cooking oil
2 tbsp chopped onion
2 garlic cloves
2-3 red chili
100-gm boneless chicken
1 tbsp sweet soy sauce
1 egg
1 ½ tsp balachaw paste
1 ½ cup cooked rice
¼ tsp turmeric
1 tsp soy sauce
½ tsp pepper
Garnish
1 tsp fried onions
1 egg
Instructions:
1. Simmer soy sauce with brown sugar on low heat until it thickens
2. Set aside the sweet soy sauce to use for later
3. Add cooking oil along with chopped onion, garlic cloves, and red chili in pan
4. Stir for 1-2 minutes
5. Add bite size chicken pieces and sweet soy sauce
6. Stir in whisked egg
7. Add balachaw paste and cooked rice
8. Add turmeric, soy sauce, salt and pepper to taste
9. Garnish with a fried onion and a sunny side up before serving
10. Ready to Enjoy!

Nasi Goreng Indonesian Fried Rice - 印尼炒饭
Fried rice indonesian style is one of our favourite versions of fried rice to make! It's so simple and packs so much flavour with the right the sambal belacan, of course.
Full recipe:
Using pre-made sambal belacan that you can get from the (Asian) supermarket, you can whip up this dish in 15 minutes! Makes for a quick and satisfying meal. It is a great leftover rice recipe, using up extra cooked rice from the day before.
Nasi Goreng with chicken is only complete with a super crispy egg with a runny centre. Sedap!
