How To make Nana's Sugar Cookies
3/4 c Soft margarine
1 1/2 c Powdered sugar
2 Egg whites
1 ts Vanilla extract
2 1/2 c All-purpose flour; or
-unbleached 1 ts Baking powder
1 ts Cream of tartar
Recipe by: Healthy Cooking for Two In a large bowl, cream margarine and sugar; add the egg white and vanilla extract. In a medium bowl, combine the flour, baking powder and cream of tartar; gradually add to margarine mixture. Cover the bowl and chill for 1 hour. Preheat oven to 400 degrees; lightly coat cookie sheets with cooking spray. Roll the dough on a lightly floured surface; cut into desired shapes with cookie cutters. Decorate with colored sugar, if desired. Bake for 7 to 8 minutes, or until slightly golden. You may decorate with frosting after cookies are cooled. Penny Halsey (ATBN65B). Nana's Incredible Potato chip cookies
Ingredients and method for Potato Chip Cookies
2 cups (16oz.) butter 3 cups flour
1 tblsp. vanilla 2 cups hand crushed potato chips
1 cup sugar 1 cup chopped pecans
10x (confectioner )sugar for sprinkling
Cream butter,sugar and vanilla.Add flour,chips and pecans..Drop by about 1 1/2 tsp. onto parchment paper on an ungreased cookie sheet. sheet. Press slightly and bake about 12-15 min. at 350 .Slide parchment paper to rack and sprinkle cookies with 10x sugar.. Cookies are very rich but not too sweet in the mix so the 10x adds sweetness.

INGREDIENTS AND DIRECTIONS 350 DEG. MAKES ABOUT 3 DOZ. SANDWICH COOKIES
3/4 POUND(3 STICKS) UNSALTED (SWEET) BUTTER AT ROOM TEMPERATURE
1 CUP SUGAR
1 TSP. VANILLA
3 1/2 CUPS FLOUR
1/4 TSP. SALT
RASPBERRY JAM
PREHEAT OVEN TO 350
IN LARGE MIXING BOWL,COMBINE BUTTER AND SUGAR WITH PADDLE BEATER
ADD VANILLA
IN A MEDIUM BOWL STIR FLOUR AND SALT TOGETHER
ADD THE DRY INGREDIENTS TO THE BUTTER SUGAR MIXTURE AND MIX AT LOW SPEED UNTIL DOUGH COMES TOGETHER.
FORM INTO A FLAT DISC,WRAP IN PLASTIC AND CHILL 30 MINUTES.
ROLL THE DOUGH OUT 1/4 INCH THICK AND CUT WITH DECORATIVE CUTTER .CUT A HOLE IN CENTER OF HALF THE COOKIES.
PUT ALL THE COOKIES ON PARCHMENT PAPERED(OR UNGREASED) COOKIE SHEET AND CHILL FOR 15 MINUTES.
BAKE THE COOKIES UNTIL THEY BEGIN TO BROWN ,ABOUT 20-25 MINUTES.
COOL TO ROOM TEMP
SPRINKLE THE TOP OF THE COOKIES WITH THE HOLES IN THEM WITH 10X SUGAR.
TURN THE PLAIN COOKIES OVER SO FLAT SIDE IS UP AND PUT RASPBERRY JAM-ABOUT 1/2 TSP. IN THE MIDDLE.YOU WANT ENOUGH JAM TO TASTE AND KEEP THE COOKIES TOGETHER BUT YOU DON'T WANT THE JAM TO SEEP OUT ON THE OUTSIDE EDGES. PUT THE 10X COVERED COOKIE ON TOP MAKING A SANDWICH PLEASE FORGIVE MY VIDEO NONSENSE TALKING ABOUT MIXING FLOUR AND SUGAR WHEN I WAS MIXING BUTTER AND SUGAR . I MUST BE SUFFERING FROM BAKER BURNOUT.!! OR OLD AGE!
