200 grams button mushrooms
2 tbsp vegetable oil
3 medium onions finely chopped
50 grams butter
6-7 garlic cloves finely chopped
100 ml heavy cream
2 tbsp all purpose flour
salt to taste
1 tsp black pepper powder
1 tsp paprika
2 tsp dry basil
2 tsp dry thyme
Fresh parsley/coriander for garnish
1 cup hot water/vegetable stock

2 Tbs - Clarified Unsalted Butter
4 Cloves - Garlic, Thinly Sliced
1 - Shallot, Fine Diced
300g - Swiss Brown Mushrooms, Thinly Sliced
2 Tbs - White Wine (Use a cheap White Wine, I used Chardonnay) Can be substituted for Vegetable Stock or Chicken Stock.
2 Tbs - Curly Parsley, Chopped (Can be substituted for Flat Leaf Parsley)
1 tsp - Thyme, Chopped
400ml - Full Fat Cream (Thickened Cream)

For this recipe, I cook down a good amount of crimini mushrooms, until the flavors are nicely concentrated and the mushrooms have a great texture. To lighten it up a bit, I add a good handful of peas, which provide a great contrast in texture and flavors. To hold everything together, use a bit of chicken stock to create a sauce that coats the pasta and marry's all the flavors.
