MONSTER COOKIES
Prep Time - 15 minutes
Cook Time - 10 minutes
Total Time - 25 minutes
Servings - 36 cookies
INGREDIENTS
• 1½ cups creamy or chunky peanut butter
• 1 cup packed light brown sugar
• 1 cup granulated white sugar
• 1/2 cup (1 stick) unsalted butter, at room temperature
• 3 large eggs
• 1 tablespoon vanilla extract
• 4½ cups quick cooking oats
• 2 teaspoons baking soda
• 1 cup semi-sweet chocolate chips
• 1 cup M&M's plain chocolate candies
INSTRUCTIONS
- Preheat oven to 350°F. Spray cookie sheets with nonstick spray, or line with parchment paper or a silicone mats.
- In a large bowl, combine the peanut butter with the sugars and butter. Use an electric mixer to mix until well combined. Mix in the eggs and vanilla. Mix in the oats and baking soda. Then stir in the chips and M&M's.
- Drop the cookies by heaping spoonfuls onto the prepared cookie sheets. If you'd like your cookies to look pretty, dot a few extra M&M's and chocolate chips on each mound of dough before baking.
- Bake 10 to 12 minutes. Do not overbake. Cool for 5 minutes on cookie sheets until cookies are set. Transfer to wire racks; cool completely before storing in an airtight container.
NOTES
- If you are preparing this cookie as gluten-free, just be sure to make sure you are using brands of the following items that are known to be GF: peanut butter, vanilla, oats, chocolate chips and M&M's.
Giant Monster Cookies | Easy Homemade Recipes
Giant Monster Cookies:
These Giant Monster Cookies are full of chocolate peanut buttery deliciousness! They’re one of the easiest cookies you’ll ever make.
Ingredients
2 cups (300g) oats, preferably not quick oats
1/4 tsp. baking powder
1 tsp. baking soda
1 cup (128g) all-purpose flour
1/4 tsp. coarse kosher salt
1/2 tsp. ground cinnamon optional
1/2 cup (113g) unsalted butter, softened
1/4 cup (57g) granulated sugar
3/4 cup (150g) brown sugar, packed
1 cup (226g) creamy peanut butter
2 tsp. vanilla extract
2 large eggs, room temperature
1 cup M&Ms, divided (mini M&M's work great as garnish as well)
1/2 cup chocolate chips
Instructions
TOASTING THE OATS (OPTIONAL)
Preheat oven to 350°F.
Place oats on baking sheet and toast for 12 minutes, rotating pan halfway through. Remove and let cool on cooling rack.
MONSTER COOKIE
Combine oats, baking powder, baking soda, flour, salt, and cinnamon in medium bowl. Set aside.
Combine butter, sugar, brown sugar, and peanut butter in bowl of mixer until fully mixed, about three minutes at medium speed.
Add eggs, one at a time, mixing for 30 seconds after each addition.
Add vanilla extract.
Reduce mixer speed and add oat mixture. Mix just until combined.
Add 1/2 cup M&Ms and 1/2 cup chocolate chips.
Cover bowl with plastic wrap and let rest at room temperature for one hour.
Preheat oven to 350°F.
Use 1/2 cup measuring cup to portion cookies and place on parchment-lined baking sheet. Cover individual cookies with remaining M&M's.
Bake for 16-20 minutes or until edges are slightly golden brown. Remove from oven and let cool.

Big Batch Monster Cookies with Peanut Butter, Oatmeal and Candies
Monster cookies are one of our family’s absolute favorite recipes. Loaded with peanut butter, oatmeal and chocolate candies, they turn out chewy and delicious. The batch is big, but freezes well too for cookies any time you want them.

Ingredients:
6 eggs
2 cups sugar
2 cups brown sugar
1 cup butter, melted
4 tsp baking soda
2 teaspoons vanilla
3 cups creamy peanut butter
9 cups oatmeal (I always use rolled oats because I like the texture, but she suggests quick oats)
1 pound assorted chocolates (I usually use a mix of M & M’s and chocolate chips)
Feel free to add raisins, dried cranberries and/or nuts if desired
