How To make Mocha Walnut Christmas Cookies

semisweet chocolate chips, divided

tablespoon
instant coffee powder
2
teaspoon
boiling water
1
cup
flour
3/4
teaspoon
baking soda
1/2
teaspoon
salt
1/2
cup
butter, softened
1/2
cup
sugar
1/2
cup
brown sugar, firmly packed
1
each
egg
1/2
cup
walnuts, chopped
Directions:
Preheat oven to 350F. Melt 1/2 cup chocolate chips over hot water or in microwave. Stir until smooth; cool to room temperature. In small cup, dissolve coffee in boiling water; set aide. Combine flour, soda, and salt; set aside.
In large bowl, combine butter, sugars and coffee; beat until creamy. Add egg and melted chocolate; mix well. Gradually add flour mixture. Stir in remaining 1-1/2 cups chocolate chips and walnuts.
Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake at 350F for 10-12 minutes. Let stand 2-3 minutes before removing from cookie sheets; cool completely.

I don't have a lot of things from my late grandmother, so when I came across this recipe written in her pen, I knew I had to save it for a special occasion.

Grandma’s Mocha Walnut Cookies
Ingredients:
* 1 12oz package semi sweet chocolate chips
* 2 Tbsp instant coffee
* 2 tsp hot water
* 1 1/4 cup all purpose flour
* 3/4 tsp baking soda
* 1/2 tsp salt
* 1/2 cup unsalted butter at room temp.
* 1/2 cup granulated sugar
* 1/2 cup brown sugar
* 1 large egg
* 1/2 cup chopped walnuts
Directions:
Preheat oven to 350°F
Over a double boiler, melt 1/2 cup of chocolate chips, stir and set aside to cool. In a small cups, dissolve the instant coffee and set aside as well.
In a small bowl, combine flour, baking soda and salt, set aside.
In a large bowl, combine butter, both sugars, and coffee and mix all together until creamy.
Add the egg and the melted chocolate and mix well.
Slowly add in the flour mixture then the remaining chocolate chips (I only added in 1/2 cup more, not the whole rest of the package), and the walnuts and mix until combined
Scoop onto a NOT greased baking sheet.
Bake for 10-12 minutes.

INGREDIENTS:
Butter 1/2 cup
White sugar 1/2 cup
Brown sugar 1/2 cup
Eggs 2
Vanilla essence 1tsp
Coffee 1-1.5 tbsp
Flour 1 cup
Baking soda 1/4 tsp
Chocolate chips 3/4 cup
PROCEDURE:
Preheat oven at 180 Celsius. Beat room temperature butter until fluffy then add both sugars and beat well.Next add 2 eggs, beating well after each addition.Then add vanilla and coffee and mix well . Now combine flour and baking soda and mix on low speed and add chocolate chips.Mix for a final minute and let the mixture rest for half an hour in the refrigerator.
Line a cookie sheet with baking or parchment paper and scoop the mixture on the baking sheet,leaving space between each cookie. bake at 180 degrees for 10-15 minutes until the edges are golden brown.These cookies will be soft and chewy in the middle and crispy on the edges. Now enjoy with a glass of milk or any way you like!

Preheat oven at 170°C for about 15 mins

100g Icing Sugar
90g Vegetable Oil
240g Plain Flour
115g Corn Flour
20g Custard Powder

Butter Pecan Cookies
These butter pecan cookies are to die for! To bring out the nutty flavor of the pecans I toasted them lightly in a brown butter I made myself, and they turned out amazing. That brown butter really adds a depth of flavor to the cookies.
This recipe makes 12 cookies. The dough can be made in advance and stored in the refrigerator. The dough can be frozen but I highly suggest letting the dough thaw some before putting it in the oven. You want it to be good and cold but not frozen. Thank you for watching and I hope you enjoy this recipe as much as I do!
