How To make Mocha Truffles

11 1/2 oz Milk chocolate chips
1/2 c Whipping cream
2 ts Instant coffee granules
2 ts Coffee-flavored liqueur
2/3 c Vanilla wafer crumbs
Melt chips with whipping cream and coffee granules in heavy, medium saucepan over low heat, stirring occasionally. Whisk in liqueur until blended. Pour into pie pan. Refrigerate until mixture is fudgy, but soft, about 2 hours. Shape about 1 T of the mixture into 1 1/4 inch ball by rolling between your palms. Place balls on waxed paper. Place crumbs in a shallow bowl. Roll balls in crumbs; place in petit four or candy cases.

This easy no bake recipe makes the most scrumptious chocolate truffle! They come together in a snap, are beyond addictive and yes they’re brimming with brandy!

Do you ever just want a bite or two of something sweet and or chocolatey, to satisfy a craving? I don’t always have a slice of cake at the ready — shocking considering how much I bake — so I decided to whip up some truffles. Since the weather is cooling down a bit, I used a drop (1/4 cup) of brandy helps to warm things up. I finished them off with a quick roll in the toasted coconut, pecan, and cocoa powder. Soooo GOOD! Does anyone else remember those little chocolates in the shape of liquor bottles? Not sure if I should have had those as a kid, but I guess the 80’s were a different time Enjoy this adult version of that.

I do think these truffles would be a PERFECT Valentine's Day treat in case you're wondering what to make.

Yes you can totally omit the alchohol if desired! To add some interest feel free to mix in toasted nuts, some coffee or candied cherries to make this recipe your own.

Mocha Truffles

Easy, decadent, espresso flavored mocha truffles are a treat you won't want to miss out on. Great for edible gift giving!

RECIPE AND INSTRUCTIONS HERE -

Ingredients
For the Truffles
1/2 cup heavy cream
8 ounces semi-sweet chocolate chopped, chips will also work
2 Tbsp espresso or strong brewed coffee
1 Tbsp butter
1 tsp vanilla extract
1/2 tsp sea salt
To Coat
8 oz chocolate chopped
1 Tbsp coconut oil
Instructions
Warm the heavy cream in the microwave for 30-45 seconds, or until it reaches about 115F.
In a large bowl, combine the warm cream, chocolate, espresso, butter, vanilla, and salt. Whisk until it is fully combined.
Place the chocolate mixture in the fridge to chill for 4 hours, or until it has fully set.
Once the chocolate has set, use a 1 tablespoon cookie scoop to scoop balls onto a parchment lined baking sheet. Smooth the truffles by rolling them around in your palms.
Place the truffles in the freezer to chill for 10 minutes.
Meanwhile, add the chocolate and coconut oil to a medium bowl. Microwave it on 30 seconds intervals, stirring between each interval, until the chocolate is fully melted.
Dip each truffle one at a time into the melted chocolate and then place it on a parchment lined baking sheet to set.
While the chocolate is still wet, add any sprinkles or decoration, if desired. We topped ours with a light sprinkle of sea salt and a drizzle of chocolate.
Allow the chocolate to set fully before enjoying.
Store in an airtight container in the refrigerator for up to 3 days.
Notes
Any kind of chocolate can be used in this recipe. Dark and milk chocolate are delicious options!
To make boozy truffles, substitute the espresso for Kahlua.
If you don't have sea salt, use ¼ teaspoon of kosher salt.
