How To make Mini Chip Cheesecake Cookies
1 1/3 c Graham Cracker Crumbs
1/3 c Sugar
1/4 c Unsweetened Cocoa Powder
1/3 c Butter
2 c Semisweet chocolate mini
Chips 3 pk Cream Cheese, softened (8 oz
Each) 1 cn Sweetened condensed milk
(14 oz can) 3 Eggs
2 ts Vanilla Extract
Combine the graham cracker crumbs, sugar, cocoa powder and butter until well blended. Press even amounts of the mixture onto the bottoms of lightly buttered mini muffin tins. Melt one cup of the chips and set aside to cool. In a mixer, beat the cheese until fluffy. Gradually beat in the condensed milk and melted chocolate and stir until smooth. Add the eggs and vanilla and mix in thoroughly. Spoon the batter into the prepared cups. Top with remaining chips. Bake in preheated 300 degree oven for about 15 to 20 minutes or until set. Chocolate Chip Cookie Cheesecake - Easy Recipe
Chocolate Chip Cookie Cheesecake is as good as it sounds, rich, chocolaty and decadent. A homemade large chocolate chip cookie crust topped with a silky white chocolate and cream cheese filling and topped with chocolate ganache. Absolutely delicious and definitely a crowd pleasure.

Cookie Crust
1/2 cup (113g) butter, room temperature
1/4 cup (50g) sugar
1/2 cup (100g) light brown sugar
1 egg
1 tsp (5g) vanilla extract
1 1/2 cups (190g) flour
1 tsp (3g) cornstarch
3/4 tsp (4.5g) baking soda
1/2 tsp (3g) salt
1 cup (160g) chocolate chips or chocolate chunks
Cream Cheese Filling
7 oz (200g) white chocolate, small pieces
4 tbsp (60g) whipping cream
1 pound (500g) cream cheese, room temperature
2 tbsp (16g) powdered sugar
2 tsp (10g) vanilla extract
1 cup (240g) whipping cream (35% fat), chilled
1 oz (30g) semisweet chocolate, very small pieces
8-10 chocolate chip cookies
Chocolate Ganache
3.5 oz (100g) semisweet chocolate
3.5 oz (100g) whipping cream

8 oz cream cheese softened (224g)
3/4 cup powdered sugar (90g)
1/2 teaspoon vanilla extract

1 cup unsalted butter softened to room temperature (226g)
1/2 cup sugar (100g)
1 cup brown sugar tightly packed (200g)
2 large eggs room temperature
1 teaspoon vanilla extract (5ml)
3 cups all-purpose flour (380g)
2 teaspoons cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chips (170g), plus additional for topping
⅓ cup mini chocolate chips (56g)

00:24 Prepare the filling first by stirring together cream cheese, powdered sugar, vanilla extract until smooth and creamy.
00:47 Scoop the filling by level 1 Tablespoon and drop on a plate or baking sheet lined with wax paper. Place in the freezer while you prepare cookie dough.

01:10 In the bowl of a stand mixer (or in large bowl using electrical mixer), cream together butter and sugars until light and fluffy. Scrape sides of bowl.

01:50 In a separate bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.

03:44 Once dough has chilled and oven is preheated, place dough on parchment paper lined cookie sheet, spacing each cookie at least 2 apart, and bake on 375 for 11-13 minutes,
