Ingredients
Part 1: Pie Crust
1 cup room temperature butter
2 ½ cups all-purpose flour
½ cup sugar
1 tsp salt
¼ cup ice water
Part 2: Filling
¼ cup freshly squeezed lemon juice
4 pcs of medium - large apples
⅔ cup sugar
¼ cup unsalted butter
½ tsp ground cinnamon
¼ tsp Nutmeg
Optional: 1 pinch ground nutmeg
Part 3: Assembling the Pie
1 egg
1 tbsp cream
3 tbsp sugar
1/2 tsp cinnamon
Instructions
Part 1: Pie Crust
Mix all the ingredients thoroughly. You can use your hands when the dough becomes hard enough
Transfer the dough to a cling wrap and place it in the fridge for 30 minutes to chill
Note that you need to create two batches of dough (one for the crust and the other one for the lattice)
Part 2: Filling
Squeeze half of the lemon to the finely sliced apple and add the sugar, give it a quick toss
In a large skillet, melt the butter and add the apples.
Add the cinnamon and let it cook (stirring occasionally) for 5 - 7 mins until the juices come out
Pour the apples into a strainer and pour the juice back into the pan
Add the cornstarch and stir the juice until it thickens
Add the reduced juice to the apple and let it cool completely
Part 3: Assembling your pie
Roll out your chilled dough to about ¼ inch thick
Use a cookie cutter (or any cutter) to cut the dough, making sure that it’ll fit to the molder of your choice
Carefully place the cut dough into the molder and pour the filling
Take out the second batch of dough you created, roll it out and cut it into strips
Make a lattice by carefully placing each strip over one another. You can lay one set of strips then fold every other strip over. Place a strip of dough perpendicular to the others next to the folded strips. Fold down the strips and repeat the process
Create your egg wash by combining egg, milk and cinnamon powder. Carefully brush each pie
Bake in 180C for 40 to 50 minutes until golden brown
Serve and enjoy!

Recipe:
• 1 package of Pre-made pie crust
• 1 granny smith apple, cored, and cut into chunks( leave skin on)
• 1 gala apple, cored, and cut into chunks (leave skin on)
• 1/4 cup white sugar
• zest of 1 lemon
• 1 tbsp orange juice
• 3/4 tsp cinnamon
• 1/2 tsp nutmeg
• 1/8 tsp ground cloves
• 2 tbsp all-purpose flour
• 1/2 tsp salt
• 1 egg beaten & 1tbsp water for brushing crust with
Directions:
• Preheat oven to 375°F
• Roll out pre-made pie crust over a floured surface; roll the pie crust out to about ¼ inch thickness and cut it into six sections. Use each section to fill each muffin tin cup, When pressed into the tin cups, poke holes at the bottom and sides with a fork to release steam and stop the crust from bubbling.
• Bake for about 10 minutes to par-bake the bottom crust.
• Mix together the apple chunks, nutmeg, cinnamon, ground cloves, sugar, salt, flour, orange juice and lemon zest to create the filling. Then add filling, making sure to see the pretty apple skins on top.
• Use the second rolled pie crust in the package, cut into about ¼ inch to ½ inch-wide long strips, and layer to create a lattice pattern.
• Brush pies with egg wash (1 egg + 1 Tbsp water, whisked together) and bake for about 15 more minutes, or until mini pies are golden brown and cooked through.
• Let them cool and top off with vanilla ice cream and cinnamon to serve!
Styling Tips:
• Curl the pie edges inwards to create a thicker barrier on the outside
• Poke holes in the crust to prevent pastry from bubbling
• Cut the apples in little chunks and leave the skin on for color
• Place the apples skin side up in the crust to see the color come through
• Layer the strips by weaving over and under and alternate each one
• Brush on an egg wash to create a crispy golden look to the top
• Use an unused paint brush to brush the egg wash
• Have everything set up and ready to serve before topping with ice cream
• Use a smaller ice cream scoop so you don’t cover the whole pie up

Mini Apple Pie / Hand Pie / Fingerfood / Sallys Welt
Rezept:

Fantastic! Mini Apple Pies Recipe - Macerated Apple Trick - Glen And Friends Cooking
Individual Mini Apple Pies Recipe - Glen And Friends Cooking This recipe for single serve individual apple pies, works great for a full sized deep dish apple pie as well. Macerating apples before making an apple pie, helps the apples retain shape and crunch - and keeps the apple pie filling from being soggy. Macerating fruit for pies is an age old 'trick' that doesn't get mentioned all that often outside professional baking circles. Yet macerated apples will give you the ultimate apple pie filling.
Ingredients:
8-10 baking apples, diced (about 8 cups)
10 mL (2 tsp) sugar for each apple
10 mL (2 tsp) cinnamon
5 mL (1 tsp) grated nutmeg
1 recipe for a double crust pie dough ( )
30 mL (6 tsp) butter
Egg wash
Method:
Peel, core, and dice the apples.
Place in a bowl, and stir in the sugar, cinnamon, and nutmeg.
Cover and refrigerate for 24-48 hours.
Drain off the accumulated liquid into a pot and simmer gently to reduce by ½ - ⅔.
Roll out the pie dough and line 6 (5” x 1.25” / 3cm x 13cm) individual pie pans.
Fill with apple, pour in some of the reduced syrup, and add 1 tsp of butter on top.
Seal the pastry, egg wash and sprinkle sugar on those that you will bake today, and freeze the rest.
(Freeze the pies, then wrap them)
Bake for 20 minutes in a preheated 230ºC (450ºF) oven, then reduce temp to 180ºC (350ºF) and bake for 45 minutes more - or until pastry is golden brown.
The frozen pies can be baked from frozen by adjusting the time slightly.

Welcome friends welcome back to the kitchen today i was going to make a big apple pie uh i've got some ambrosia apples here that i need to use up um they're pretty bruised kind of on their last legs so i thought i'd make a pie and then i thought there's just two of us we're in a lockdown why don't i make individual pies or smaller pies uh so that i can freeze some and then we don't have a giant pie sitting on the counter calling to us to eat it so start by peeling the apples and you could use a peeler you could use a paring knife like i'm doing so many ways to peel an apple do the way that makes you feel comfortable and for the most part i think of apple pies as being fairly free form um every apple is going to taste different going to need a different amount of sugar going to need a different amount of spicing and you sort of have to play it by ear depending on what apples you get and as much as everybody says you know all you should use this type of apple not every type of apple is available everywhere all the time this ambrosia apple that i'm using is available across north america fairly easily i believe it's grown pretty much everywhere in north america at this point but it's not always going to be at the grocery store it's not always going to be at the market so you have to kind of play it by ear when you're working with apples and not every apple is going to be the same size you're sometimes going to have to cut around bad parts so you need to be flexible when you're doing this and don't really worry too much about it it'll often turn out just fine so i've got a lot of apples i should shut up and just keep peeling
