How To make Mincemeat(Real Meat)
1 lb Beef [for stewing]
2 c Water [boiling]
1 t Salt
4 c Apples [chopped]
1/2 pk Raisins [seeded]
1 pk Raisins [unseeded]
1 c Orange peel [grated]
1 c Citron
1/2 lb Suet [chopped]
1 c Molasses
1 c Sugar
2 c Coffee [prepared strong]
1 c Cider (or fruit juice)
1 t Cinnamon
1 t Nutmeg
1/2 ts Cloves [ground]
1/2 ts Allspice
1) Simmer beef in water and salt `til very
tender, drain & reserve stock and chopped meat. 2) Combine in a large kettle the meat, the remaining ingredients, and 1 cup of the beef stock, stirring over low heat `til thoroughly mixed. 3) Continue cooking over low heat for about 2 hours or most of the liquid is absorbed, stirring occasionally during cooking and more often as mixture thickens. It is made with a variety of fresh, dried, and candied fruits that are all stewed in a delicious mixture of butter, apple juice, dark brown sugar, rum, brandy, orange zest and ground spices. So easy to make and once you taste this rich, sweet, and spicy preserve you will never buy it again.

Homemade Mince Meat (Pie Filling)
This is a delicious recipe to make your own mince meat for mince pies. I love mince pies with fresh cream or custard. There is nothing better that home made mince meat.
Here is the recipe
250g of raisins
200g of sultanas
175g of currants
1/2 cup of brandy
Soak your fruit in the brandy
1 cooking or Granny Smith apple
1 lemon, rind and juice
85g mixed peel
1/2 pound of butter or 300g of suet
1 teasp of mixed spice
or
1 teasp all spice
1/2 teasp nutmeg
1/2 teasp cinnamon
Strain fruit from brandy, keep brandy for the end.
In a saucepan bring all ingredients to a simmer and simmer for 10 minutes.
Add brandy and allow mixture to cool.
Add to sterilized mason jars and store in fridge until ready to use. I recommend you allow the mixture to rest for at least 2/3 weeks.

1kg / 2lb of Mixed Dried Fruit
175g / 6oz of Suet
1 Teaspoon of Cinnamon
2 Teaspoons of Mixed Spice
1/2 a Teaspoon of Nutmeg
250g / 8oz of Soft Brown Sugar
2 Lemons, Zest and Juice
2 Oranges, Zest and Juice
3 Granny Smith or Cooking Apples Finely Diced
4 Tablespoons of Brandy
Cooking Temperature 110C / 225F for 2 - 2.5 hours

onion - 100 g (3.5 oz)
minced meat - 800 g (28.2 oz)
eggs - 2 pieces
salt - 10 g (0.35 oz)
black pepper - 5 g (0.18 oz)
oil - 20 ml (0.7 fl oz)
mushrooms - 300 g (10.6 oz)
salt - 5 g (0.18 oz)
black pepper - 5 g (0.18 oz)
pressed cheese - 100 g (3.5 oz)

Ingredients for Aloo Keema Masala:
Keema (Goat Mince)- 500 gms.
Potatoes, cubed- 2 medium (200 gms.)
Whole Spices:
- Green Cardamom- 4
- Cinnamon- 3
- Cloves- 5
- Dried Red Chillies- 3 (halved)
- Whole Black Peppercorns- 10
Spice Powders:
- Turmeric Powder- 1/2 tsp
- Red Chilli Powder- 1.5 tsp
- Coriander Powder- 2 tsp
- Cumin Powder- 1/2 tsp
- Kashmiri Chilli Powder- 1 tsp
- Garam Masala Powder- 1 tsp
- Green Cardamom Powder- 1/2 tsp
Other Ingredients:
- Onions, chopped- 4 small (200 gms)
- Ginger Garlic paste- 2.5 tsp
- Curd/Plain Yogurt, whisked- 3 tbsp
- Tomato Sauce - 2 tbsp
- Refined Oil- 4 tbsp
- Coriander Leaves, chopped- 2 tbsp
- Salt - 1 tsp or to taste
Preparation:
Wash & keep the minced meat to drain in a colander.
Chop the onions and the coriander leaves. Peel and cube the potatoes, keep it in a bowl of water to prevent it from darkening.
Whisk the curd/yogurt, set aside.
Process:
Heat oil in a kadai/wok & add the whole spices. Once it splutters, add the chopped onions and fry on medium heat for around 10 mins till light brown in colour.
Add the ginger garlic paste and fry on low heat for 2 mins till the raw smell is gone.
Add the washed and drained keema (minced meat) and fry on high heat for 3-4 mins till colour changes.
Add the turmeric, red chilli, coriander and cumin powders & salt, give a mix. Fry/bhunno on medium heat for around 7-8 mins till the keema is browned and oil separates.
Add the Kashmiri Chilli Powder, Garam Masala Powder, Green Cardamom powder and whisked curd/yogurt, give a mix on low heat and fry on low heat for 2 mins till the curd is cooked. Continue to fry on medium heat for another 2 mins.
Now add the cubed potatoes, add a pinch of salt, mix and fry for 2 mins.
Add 200 ml water, mix and cover & cook on low heat for 20 mins till the keema & potatoes are tender.
Add the tomato sauce, mix and simmer for 2 mins.
Garnish with chopped coriander leaves, give a mix and simmer for a minute.
Serve with naan, roti or rice.
