Deep Fried Reubens | Best Reuben Fritters Recipe | Irish Cannonballs | Spatchcock Funk
Some places just feel like home, know what we mean? For us, it’s the one and only Kitty Hoynes, where we do a lot of plotting and scheming for the Spatchcock crew. Besides great people and beer, they also have great food, and one of our favorite treats - Reuben fritters, also known affectionately as Irish Cannonballs. We don’t know how they do ‘em, but they come out both crispy and creamy at the same time. They’ve got swiss cheese, corned beef and sauerkraut, and at Kitty’s, they serve ‘em with a honey grain mustard that really sets things off nicely. We take our swing at it, and they’re perfect for the big game, a cocktail party at home, or a fun Saturday lunch for the wee ones. Some things just feel right, a reuben, deep fried of course, is the perfect hand held. Like they sing in Whisky in the Jar, we fire both barrels.

Ingredients for Honey Dill Mustard
• ⅓ C Dijon mustard
• ¼ C honey
• ¼ C mayo
• 1 Tbsp chopped fresh dill
• 1 Tbsp lemon juice
• ¼ tsp Cayenne pepper

Directions for Honey Dill Mustard
• Combine all ingredients in a mixing bowl
• Whisk it up until smooth

Ingredients for Reuben Fritters
• 1-2 lbs of cooked corned beef brisket
• 1 C sauerkraut
• 1 brick of cream cheese, left out to room temperature
• .75 lb. shredded swiss cheese
• Vegetable oil for frying
• Flour (for coating)
• Buttermilk
• Panko bread crumbs
• Dried parsley
• Fresh parsley
• Flake salt

Directions for Reuben Fritters
• Dice the corned beef as much as you can, shredding it is great too
• Add sauerkraut, cream cheese and swiss cheese and mix up really well
• Once it’s evenly mixed, use your hands and roll each one into golf ball size balls
• Fill a big pot ⅓ of the way with oil, heat to 350 degrees
• Mix the parsley with the panko bread crumbs
• Place the flour in one bowl, buttermilk in another and the breadcrumbs in another
• Dip each ball into the flour, buttermilk and then the breadcrumbs
• Drop them into the oil for 3-5 minutes until golden brown
• Remove, put on paper towel, salt with flake salt, add chopped parsley
• Serve with the dip and raise one up
