EASY Christmas Snowballs - Pecan Balls - So Easy, ANYONE Can Make These

1 cup all purpose flour
1/2 cup (4 ounces/113 grams) butter, softened - I use unsalted
1 cup finely chopped toasted pecans
3 Tablespoons granulated sugar
1 teaspoon pure vanilla extract
1 cup powdered sugar for rolling

I M P O R T A N T ⚠️
Make sure the butter is at room temperature
Tip!!! Allow the cookies to cool down for 10 minutes before coating with powder sugar
If you think its too much sugar, add 1/2 cup only
PRO TIP good but not necessary- refrigate for 20 minutes before baking
Bake at 350 for 15 minutes
Ingredients: 16 cookies (2 tbsp each) double recipe if needed ????
1 cup (2 sticks)butter at room temperature
1/2- 1 cup powder sugar
2 tsp vanilla extract
Pinch of salt
1/2 tsp baking powder
2 cups APF

One of the things that makes our Mexican Wedding Cakes a Christmas cookie favorite is their round shape. This shape makes the cookies easy to eat in one bite, which is important because the cookies are so crumbly.
The key to nailing this Mexican Wedding Cakes recipes is really rolling a round ball, no bigger than 1″ wide. After rolling a few of these, you'll be a pro at Mexican Wedding Cakes!

These super-easy, melt in your mouth cookies made with lots of almond meal and rolled in powdered sugar are a global favorite! Almost every culture has a variation and all are delicious!
Aliases include: Mexican wedding cookies, or polvorones, kourabiedes in Greece, Russian tea cakes, snowball cookies in parts of America, boomeranng cookies, and the list goes on! So delicious and they whip up in a snap. The cookies themselves are not very sweet so that heavy dusting of powdered sugar and just the right amount of sweetness.
I used almond meal in these cookies but you can use ground walnuts, or pecans and definitely feel free to have some larger chunks in there too.
