How To make Mexican Pita Pizzas
4 Pita breads
1 cn Black beans (15 oz)
- drained Pico de Gallo (11.5 oz) - drained 1 c Cheese, Cheddar
- shredded 1 c Cheese, Monterey Jack
- shredded 2 c Lettuce
- shredded Salsa Guacamole Scallions - sliced Olives, ripe Sliced Heat oven to 375F. Place pita breads on large baking sheet. In medium bowl, combine beans and Pico de Gallo. Spoon over pita breads. Sprinkle each with cheeses. Bake 14 to 18 minutes or until heated through and cheese is melted. Top with shredded lettuce. Cut each into 6 wedges. Serve with salsa, sour cream, guacamole, scallions and/or olives. Nutritional Analysis per serving: 90 calories, 5 g. protein, 11 g. carbohydrates, 3 g. fat, 10 mg. cholesterol, 180 mg. sodium, 95 mg. potassium. If you’re bored with your go-to meals and lacking motivation to cook. It’s time to get creative in the kitchen. This delightful recipe will give your palate something new.
Ingredients
For chicken marination
1kg chicken
1 tbsp Ginger garlic paste
Salt to taste
1 tbsp crushed black pepper
1 lemon's juice
For Sriracha-mayo
250ml mayo (1 cup)
3 tbsp Sriracha sauce
4 tbsp ketchup
For pita dough
250ml + 130ml warm water
1 tsp sugar
7g yeast
4 cups flour (500g approximately)
2 tsp salt
3 tbsp oil
For salad
Chopped red onion and cucumber

Mexican pita pockets
• 1tbsp oil
• 1tbsp Ginger Garlic paste
• 1/2cup paneer
• Black pepper
• Salt
• In bowl
• 1/2cup tomatoes
• 1/4th cup onion
• 1/4th cup capsicum
• 1/4th cup bell pepper
• 2tbsp Jalapeños
• 2tbsp olives
• Fresh coriander
• Lemon juice
• Salt
• Red chilli flakes
• Seasoned paneer
• Pita bread
Description:
• Set a pan on a medium flame and add oil, ginger garlic paste, paneer, black pepper and salt
• Mix well and cook for some time
• In bowl add tomatoes, onion, capsicum, bell pepper, jalapeños, olives, fresh coriander and lemon juice, salt and red chilli flakes
• Then add seasoned paneer
• Mix well and keep aside
• Now take a pita bread and cook on a grill pan, cut into 2 slices as shown in the video
• Then open the bread from the middle and add seasoned paneer mixture in it
• Cut into pieces and serve immediately
