How To make Melting Moments Cookies
1/2 c Butter
1/2 c Confectioner's sugar
3/4 c Flour
1/3 c Cornstarch
1/4 ts Almond extract
1/4 ts Vanilla
Confectioner's sugar Preheat oven to 325~. Spray cookie sheet with PAM. In large bowl, cream butter. Gradually beat in confectioner's sugar until light and fluffy. Blend in flour and cornstarch until blended well. Mix in almond and vanilla extracts. Form dough into 1 inch balls. Place 1 inch apart on sheets. Bake at 325~ for 15 minutes or until cookie is firm to the touch, they should not brown. Remove to wire racks to cool.While still warm, dust cookies with confectioner's sugar. Makes 3 dozen. -----

Melting moments cookies are the most popular cookies on every festive occasion. We make it for every Christmas and Chinese New Year, pack it in small boxes as a present to people and friends. There was once we even make some extra to sell.
Our melting moment consists of only five ingredients. It melts in the mouth, full of buttery flavor, very crumbly and addictive. It is not surprising that whoever has tried it can finish eating the whole box while watching their favorite TV program.

The best thing is you can bake it early and store well in the freezer.

RECIPE:
Ingredients:
380g of butter, cut into small cubes
130g icing sugar
330g cake flour
140g cornstarch
5g fine salt
Instructions:
- Measure all the ingredients.
- Put all the ingredients in a mixer or blender. Add the butter first, followed by icing sugar, and cornstarch and salt.
- Lastly, add the cake flour on top.
- Mix until the ingredients are well combined and clear from the side of the mixing bowl.
- Place a piece of baking paper on the baking tray.
- Apply some oil to the paper with a bakery brush.
- Use a small amount of the cookie dough to form a ball with your clean hand, about 12g each. Place the ball on an oiled baking paper, well separated from each other. Press it down with the back of the fork to form a pattern. Otherwise, you can also pipe it onto the baking paper.
- Bake at 190°C for 18 - 20 minutes.
- Put the cookies into the cookie box, and separate with the bubble wraps.
- Seal it up with cellophane tape.

1 cup (226g) unsalted butter, partly melted
2 teaspoons vanilla extract
3/4 cup (93g) icing/powdered sugar
1 and 1/2 cups (187g) cornflour/cornstarch
1 cup (125g) plain/all-purpose flour
1/4 teaspoon salt

cant beat old school biscuits. easy to make. recipe written below. makes 12 large or 24 small.
pre heat oven 160 degrees C
baking trays with paper
250g butter soft at room temp
1 tea spoon vanilla extract
1/2 cup icing sugar or powdered sugar
beat then add
1 and 1/2 cups plain flour sifted
1/2 cup cornflour sifted
half at a time stirring them in
roll heaped tea spoons with floured hands
flatten gently with a floured fork
bake aprox 16 mins for large and 14 mins for small. ready when you push on them and they dont break
cool completely on baking paper
butter cream
90g butter at room temp
3/4 cup icing sugar
beat then add
2 tea spoons of lemon juice or 1 tea spoon lemon juice and 1 tea spoon lemon rind. if you can get lemons the rind does make a big difference to the taste. still good either way
beat lemon in just til mixed through
spread a good amount on half biscuits and sandwich together with other half
sprinkle icing sugar over the top
fridge atleast half hour before eating the longer there in there the better they taste.
store in fridge covered in glad wrap or air tight container good for at least 3 days. best eaten cold.
makes 12 large or aprox 24 small
