Easy White Chicken Chili Recipe
I love the combination of all these delicious flavors. This one pot meal is so comforting for the soul. It’s everything I love on a cold winter day. I hope you give it a try.
???????????? WHITE CHICKEN CHILI
1 tablespoon olive oil
1 lb. boneless skinless chicken breast, cut into bite size pieces
½ cup onion, chopped
2 cloves garlic, chopped
1 ½ teaspoon ground cumin
½ teaspoon chili powder
¼ teaspoon cayenne pepper
¼ teaspoon black pepper
3 cups chicken stock
2 (15 oz) cans cannellini beans, drained
1 (4 oz) can diced green chiles
1 cup frozen corn
4 oz. cream cheese, cubed
¼ cup cilantro, chopped
¼ teaspoon salt

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.

A huge thing that goes into my travel planning requires that the destination boast amazing foods to try. I'm not even kidding. Travel is love. Love is food. And Israel has some of the most flavorful food to offer.

And I'll tell you, this creation of mine is so incredible, words can't even begin to describe the wondrous flavors and textures going on here. It's practically a rich Middle Eastern Chili rooted in incredibly flavorful spices!
Not only is this stew abundant and truly wonderful in the way it combines, it's a SNAP to make in your Instant Pot!
