How To make Mary Rogers's Sourdough Biscuits
1/2 c Active Starter 3/4 ts Salt
1 c Milk 2 ts Baking Powder
2 1/2 c Flour 1/2 ts Baking Soda
1/3 c Lard or Shortening 1/4 ts Cream Of Tartar
1 tb Sugar
At bedtime make a batter of the half cup of starter, cup of milk, and 1 cup of the flour. Let set overnight if the biscuits are wanted for breakfast. If wanted for noon, the batter maybe mixed in the morning and set in a warm place to rise. However, unless the weather is real warm, it is always all right to let it ferment overnight. It will get very light and bubbly. When ready to mix the biscuits, sift together the remaining cup and a half of flour and all other dry ingredients except the baking soda. Work in the lard or shortening with your fingers or a fork. Add baking soda dissolved in a little warm water to the sponge and then add the flour mixture. Mix into a soft dough. Knead lightly a few times to get in shape. Roll out to about 1/2 inch thickness or a little thicker,and cut with a biscuit cutter. Place close together in a 9 x 13-inch pan, turning to grease tops. Cover and set in a warm place to rise for about 45 minutes. Bake in a 375 degree oven for about 30 to 35 minutes. Leftovers are good split and toasted in a sandwich toaster. -----

How to Make Creamy White Gravy!
Thank y’all for stopping by! In this video we’ll teach you how to make white gravy from scratch. We’ll teach you some tricks and tips for making gravy- so grab a biscuit and let’s get started

White Gravy Recipe
1⁄2 cup bacon, sausage, or other meat grease
5 tablespoons all-purpose flour
1 1⁄2 to 2 cups milk, warmed
Salt and black pepper
1. Heat the grease over medium heat in a large cast iron skillet.
2. Sift in the flour and let it come to a boil for 2 minutes, stirring and mashing down constantly with a flat spatula.
3. Slowly stir in 1 to 1 1/2 cups of the milk and bring back to a light boil. Continue stirring until the mixture is smooth and reaches the desired consistency, about 2 minutes. You can add more milk or water to thin the gravy, if necessary.
4. Season with salt and pepper to taste. Serve hot.
TIP: A lot of times on ranches I use canned milk, which gives a very rich flavor, but sometimes I add a little water to thin it. You can also use heavy cream for a richer taste.

Shrimp & Corn Soup Recipe (page 6 of Roger's Cajun Cookbook)
Ingredients: 9 ears of fresh corn, shucked and cleaned (instead, we used the equivalent of two cans of corn), 1 can Rotel tomatoes, 1 pound peeled shrimp, 1/2 cup chopped green onions, 1/2 teaspoon thyme, 1 cup water, 1 1/2 tablespoons flour, 1 chopped onion, 1/2 can tomato sauce, 1/4 cup butter, 1 tablespoon parsley, 1/2 teaspoon basil, (salt, white pepper, to taste)
Heat butter and add flour. Make a medium brown roux. Add onion and sauté. Add remaining ingredients except green onions and parsley. Let simmer one hour. Add water for desired consistency. Add green onions and parsley. Simmer 15 minutes and serve.
