2/3 c Maple syrup plus a little
-extra for brushing 1/3 c Heavy cream

Make a well in the center of the dry ingredients and pour in the liquid mixture, combining with swift strokes until the dough clings together. Roll out about two inches thick on a lightly flouted surface. Cut scones with a three-inch round biscuit cutter and place on baking sheet about two inches apart. Scones are so much fun to make because there are so many different ways you can flavor them. I love making these maple pecan scones in the fall and adding the maple drizzle for an extra special treat when friends stop in for a visit. With simple ingredients, and not at all time consuming, you will return to this scone recipe often. Enjoy!

Maple Pecan Scones
2 cups all purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons (3/4 stick) chilled or frozen unsalted butter, grated
1/2 cup toasted chopped pecans
3/4 cup whipping cream
2 large egg yolks
1 1/4 teaspoon maple extract
1 egg white, beaten till frothy (to brush on top of scones before baking)
Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
Whisk together flour, sugar, baking powder, and salt in large bowl.
Grate frozen butter and add to flour mixture. Toss to coat butter with flour.
Using a pastry blender or rubbing with your fingertips, quickly blend in butter to the size of small peas. Stir in chopped pecans.
Whisk cream, egg yolks and maple extract in a medium bowl to combine.
Pour over flour mixture and stir with fork until moist clumps form. Using your hands, form dough into a rough ball and turn out onto a very lightly floured surface and press together a few times (don't overdo the kneading here) to incorporate the flour that may not have mixed in thoroughly in bowl.
Pat out dough about 1 inch thick in the shape of a circle. With a sharp knife, cut into eight wedges. Transfer scones to lined baking sheet. Brush with whipped egg white.
Bake on middle oven rack until scones are lightly browned, about 15-16 minutes. A pick should come out fairly clean, but may have a few crumbs.
Cool slightly, then drizzle with glaze if using.
Maple Glaze:
1 tablespoon unsalted butter
2 tablespoons pure maple syrup
pinch of salt
1/2 - 3/4 cup powdered sugar
Melt butter in maple syrup over low heat. Remove from heat and add salt and powdered sugar and whisk until smooth and a bit runny consistency.
Drizzle over slightly warm scones.
Go, eat your food with gladness, and drink your wine with a joyful heart....
