How To make Maple Pecan Mincemeat Pie
MINCEMEAT FILLING:
4 oz Tempeh
2 ea Apples, peeled, cored, diced
1/2 c Raisins
1/2 c Currants
1/2 c Dates, chopped
1/3 c Pecans, chopped
1/2 c Maple syrup
1/2 c Orange juice
1 tb Orange peel, grated
1 t Cinnamon
1/2 ts Mace
PIE CRUST:
1 2/3 c Wholewheat pastry flour
1/4 c Oil
1/4 c Orange juice
FILLING: Steam tempeh for 20 minutes, then either shred or dice finely. Stir into the remaining ingredients in a large saucepan. Bring to a simmer & cook for 10 minutes, stirring occasionally. Remove from heat & set aside to cool. CRUST: Pre-heat oven to 400F. Combine all the pie crust ingredients until a soft dough is formed. Add more juice if necessary. Divide into 2 pieces, one slightly larger than the other. Place larger ball of dough onto a lightly floured surface & roll into a 9" circle. Place into an 8" pie plate. Spoon filling into the pie crust. Roll out remaining ball of dough & place on top of the filling. Seal & crimp the edges. Bake for 10 minutes & then reduce the heat to 325F & bake until the crust is lightly browned, about 30 minutes. Cool & serve. "Vegetarian Gourmet", Winter 1995

Vegetarian Mincemeat Recipe ~ Noreen's Kitchen
I have had so many requests for mincemeat pie that I had to make mincemeat. When you go to the store to buy this it is absurdly expensive for what is in it and you get the added bonus of ingredients you may or may not enjoy. This mincemeat is super easy to make with ingredients that are readily available at the market.
Traditionally brandy is called for in this recipe. I did not have any on hand so I used Cointreau and orange liqueur and it tastes amazing!
You can choose to add to or take away from this recipe. I plan on making other versions of this delicious holiday treat in the future!
I hope you give this recipe for mincemeat a try and I hope you love it. I will be using the mincemeat in some other recipes to come soon to my channel!

Mini Pecan Pumpkin Pies

Ingredients
Nonstick cooking spray
For the dough:
1/4 cup pecans
1/4 cup sugar
1/2 teaspoon salt
3/4 cups all-purpose flour, plus extra for shaping dough
6 tablespoons butter, ice-cold
2 to 3 tablespoons ice water
For the filling:
1 egg, plus 1 egg yolk
1/2 cup dark corn syrup
1 tablespoon sugar
1/2 cup canned pumpkin pie filling
1 teaspoon vanilla
1/4 cup pecans, chopped plus 24 halves for garnish
Special equipment: 2 (12-cup) mini muffin tins
Directions
Preheat oven to 350 degrees F. Spray the bottoms and sides of the mini muffin tins with cooking spray.
For the dough: In a food processor, pulse the pecans, sugar, salt, and flour, until the nuts are ground and the ingredients are combined. Add in the butter and pulse until dough resembles coarse meal. Slowly pour in the ice water through the feed tube until the dough comes together. Remove from processor bowl to a clean work surface sprinkled with flour. Form the dough into a ball and divide evenly into 24 pieces. Roll each piece into a ball and evenly press into each cup, until the bottom is covered. If the dough is sticky, dip your finger in flour first. Bake until the crusts are very golden, 15 to 18 minutes, until the crusts are very golden. Check periodically to make sure they don't get too brown. Meanwhile, make the filling: In a medium bowl, whisk the egg yolk, corn syrup, sugar, pumpkin filling and vanilla. Stir in the chopped pecans. Remove the dough from the oven and spoon 1 tablespoon of the filling into each cup. Top each with 1 pretty pecan half. Return the pans to the oven and continue baking, for 12 to 15 minutes more, until the pumpkin filling is set. Allow to cool before removing from the pans.

Pecan pie is an American classic. Who can’t resist that rich and delicious flavour of the filling and those irresistible pecans. The pie, like any other, is a bit time consuming but is easy to make and only involves some basic ingredients. It makes a fantastic dessert for Thanksgiving, Christmas, Easter, or anytime of year for that matter. I always combine it with a scoop of vanilla ice cream for that element of perfection.
