100 g (1 cup) finely ground almonds or hazelnuts
2 tsp baking powder
1 Tbsp cocoa powder
4 tsp gingerbread spice
2 tsp orange zest
150 g (1/2 cup) date syrup or maple syrup
50 g (3 Tbsp) almond butter or nut/seed butter of your choice
180-200 ml (3/4 cup) dairy-free milk
70 g (7) dried apricots chopped into small pieces
Chocolate coating:
150 g (5.3 oz) dairy-free dark chocolate
2 tsp coconut oil

Noi utilizziamo mandorle fresche della Puglia, regione in cui questi biscotti sono tipici. I pasticcini alle mandorle sono senza glutine, hanno una consistenza morbida e sono zuccherini. Potete metterci sopra la ciliegia candita, la mandorla oppure un po’ di marmellata. La pasta reale con i nostri trucchi vi verrà buona come in pasticceria!

1 cup of granulated sugar (200 g)
2 eggs
7 oz (200g) of unsalted butter (softened)
3 cups and 2 tablespoons of all-purpose flour
3 teaspoons of baking powder
2 teaspoons of vanilla sugar or vanilla extract. (check out our homemade vanilla sugar here ►
10 drops of bitter almond aroma for cookies.
3-4 tablespoons of milk for brushing the cookies before baking.
Nib sugar (pearl sugar) for topping before baking. You can find it on Amazon ►
Bake at 400 F /200C for about 7 minutes or until golden brown on the edges.
