This cookie pie is so sweet and indulgent ???? I love how to white chocolate chips caramelise on the top and the caramel filling seeps into the sides of the cookie to give a really deep caramel cookie flavour ???? Yum

All you need is:
200g unsalted butter, softened
250g light brown sugar
1 large egg
1 tsp vanilla extract
320g plain flour
1/2 tsp bicarbonate of soda
200g white chocolate chips + some for the top
1 tin (397g) Carnation caramel
Bake 160C (fan) 25-35mins - allow to cool fully in the tin
Tin size: 8” springform pan

Amazing Spice Cake Recipe With Whipped Mascarpone Frosting And Mace
Spice cake with mace, meringue and walnuts baked right into the filling! I also use the spice Mace in place of nutmeg, so the taste is off the charts. Surrounded in whipped mascarpone cream frosting, this spice cake is a decadent desert.
Ingredients:
2 c (115 g) cake Flour
3 tsp baking powder
1/4 tsp kosher salt
2 tsp cinnamon
1 tsp cloves
1 tsp mace
1/2 c (113 g) unsalted butter
1 c (213 g) light brown sugar for the cake
1 c (213 g) light brown sugar for the meringue
1 egg + 2 eggs separated
3/4 c (175ml) whole milk
1 tsp cornstarch
1 c chopped walnuts
two 8-inch pans
1. Preheat oven to 350f.
2. First make the meringue. In the bowl of a stand mixer, whisk two egg whites until they're foamy. Whisk in 1 tsp cornstarch. Then, gradually and slowly add in 1 c brown sugar and whisk to stiff peaks. Place into a pipping bag and set aside.
3. For the cake, in a separate bowl, sift together all the dry ingredients.
4. In the stand mixer-- no need to wash the bowl -- cream the butter until it's lemon color, which take about 5 minutes. Cream in 1 c brown sugar.
5. Beat in the two yokes, scrape bowl and blend in the egg.
6. Alternate in the dry ingredients and the wet, starting and ending with the dry.
7. Divide into two pans. Spread the batter evenly around and pipe the meringue right on top of the batter. Sprinkle 1/2 c walnuts on top of the meringue.
8. Bake for 50-60 minutes or until a toothpick comes out clean.
9. Place the meringue side down on the cooling rack and allow to cool all the way to room temperature.
Whipped Mascarpone frosting
Ingredients:
16 oz. Mascarpone Cheese
2 c (500 ml) heavy cream
1 1/2 c powdered sugar
2 tsp vanilla extract
1. Whisk the mascarpone cheese until it is smooth. Add about 3/4 c of the cream to loosen it up.
2. Add the powdered sugar and whisk ensuring there are no lumps.
3. Whisk in the rest of the heavy cream and whisk to stiff peaks.
Assemble the cake as shown.

50g M&M’s + extra for the top
Bake 170C (fan) 12-15 mins - let it cool fully on the tray before moving it

For the cookie:
115g unsalted butter, melted and cooled
70g light brown sugar
70g granulated sugar
1 large egg
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
215g plain flour
15g cornflour
1 tsp cinnamon
For the icing:
90g butter, softened
90g Cream cheese, room temperature
250g icing sugar
1 tsp vanilla extract
1 tsp cinnamon
Bake 160C 8 mins - allow to cool fully before icing
Makes 16 cookies

Making a Cake Roll for Valentine’s! #shorts #baking
INGREDIENTS:
-6 large eggs, separated
-6 tbsp milk, room temperature
-4 tbsp vegetable oil
-1 tsp vanilla extract
-3/4 cup granulated sugar
-1 cup all purpose flour
-1 tsp baking powder
-pink food coloring
-a few drops strawberry extract (optional)
-4-5 cups Cream Cheese Frosting
HEART PATTERN-
-1 large egg
-2 tbsp granulated sugar
-1/3 cup flour
-1 tbsp vegetable oil
-red food coloring
HEART PATTERN-
Line a 9X13 baking pan with parchment paper.
Whisk together the ingredients for the heart pattern in a small bowl and transfer to a piping bag.
With the red batter, pipe small hearts onto the parchment paper until fully covered. Place into the freezer to chill.
Preheat the oven to 375F, then separate the egg whites from the egg yolks into two mixing bowls.
Whisk the milk, oil, vanilla, strawberry extract (if using), and pink food coloring into the bowl of egg yolks. Next, sift in the flour and baking powder. Whisk until combined and set aside.
Beat the egg whites on high speed until foamy, then slowly add in the sugar while continuing to whisk. Beat until stiff peaks have formed.
Gently fold the meringue into the egg yolk mixture, about 1 cup at a time. Be careful not to deflate the meringue while mixing.
Pour the batter on top of the chilled heart pattern and smooth to the edges of the pan.
Place into the oven and bake for 12-15 minutes.
Once baked, flip onto a floured surface, remove the parchment, and allow to cool for 5-10 minutes. Trim the edges of the cake if needed.
Spread a layer of cream cheese frosting evenly onto the cake. Carefully roll up the cake and tightly wrap in plastic wrap.
Place into the fridge to chill for at least 1 hour, then pipe extra frosting and add strawberries on top for decoration.
