Karen Mintzias 1 lb Spaghetti or other pasta 1/2 lb Butter 1/2 c Kefalotyri or Parmesan -(Grated) Fill a large deep pot 3/4 full with water. Add salt and bring to a rolling boil. Add pasta slowly, without breaking the boil. Cook 10 minutes. Place a colander in sink and turn pasta into it. Rinse under hot running water, allowing the water to drain through the spaghetti. Heat the butter in a small saucepan to a honey brown. Watch it carefully for these minutes; it burns quickly and suddenly. Return spaghetti to large pot and dribble hot butter over it. Sprinkle with half the cheese and toss gently to mix. Transfer to a large ovenproof platter, sprinkle top with more cheese and bake for 10 minutes at 350 F. Serve hot. 10 minute Tortellini - Recipe Below - This is my Fake Manti, a rip of off the exquisite Turkish dumplings, using shop bought tortellini served in a creamy sauce with chilli butter and dill. Monday Night sorted - enjoy x JGS . Serves 2 | 300g pack fresh tortellini - 200g Greek yogurt - 1 clove of garlic - 35g butter - 1 tsp Aleppo pepper flakes - 20g smashed walnuts - A small handful of chopped dill - Sea salt . 1. Cook the pasta for about a minute or as directed on the packet until al dente. Drain and set to one side. 2. Meanwhile, put the yogurt into a small saucepan. Crush in the garlic and add a pinch of salt. Mix well and warm through over a low heat, stirring occasionally, for 2-3 minutes. 3. Melt the butter in a small pan over a low heat. Add the Aleppo pepper flakes and a pinch of salt. Mix well and cook, stirring continuously, for 30 seconds to brown the butter and infuse the chilli. 4. Divide the yogurt between two warm serving bowls. Top with the pasta and drizzle over the chilli butter. Garnish with walnuts and dill and serve immediately with a glass of wine.

Here's how you make the cheesiest most perfect Mac and cheese. You're going to start off by boiling some pasta in some boiling water obviously. I use a kettle 1st to get the water boiling quicker. While it's boiling you're gonna grate your cheese. I'm using a cheddar and Swiss combination, but you can use basically any cheese. Then you're going to drain your pasta, and by the way I'm using this pipette pasta. I think it works best for Mac and cheese. You're going to start the sauce by adding equal parts butter and flour into a pot, mixing it together, and then slowly adding in your milk and increments. This is very important. If you add your milk all at once, it's not going to turn out well. Then you're gonna kill the heat, and you're gonna add in your cheese. Very important that you kill the heat or else the cheese is going to split from the temperature and it's going to be very yucky. Once your macaroni and cheese sauce are well combined, you're gonna put it into an oven safe container dutch oven thing. You're gonna add some bread crumbs and cheese on top, bake at 45p until it's nice and brown on top, and you're done. Thanks for watching, and I will see you next time.
