Pasta with asparagus and smoked ham - italian recipe
Hello everybody; today we'll learn how to make a simple and quick main course: casarecce pasta with wild asparagus and smoked ham. To prepare 4 portions we will need: 360 grams of casarecce pasta, a bunch of wild asparagus (approximately 250 grams), 120 grams of speck (Italian smoked ham), half glass of white wine, a small shallot, a bunch of parsley, 30 grams of pecorino cheese, salt, pepper and extravirgin olive oil.
We put a pot of water on the stove to cook pasta. We clean the asparagus, removing the tough part, /then we cut the ham in stripes and then in small cubes./ Now we cook the asparagus in the pasta water for about 5 minutes. In the meanwhile, we chop up thinly the shallot and the parsley./ Once the asparagus are ready, we drain them/ and we put the pasta to cook in the same pot./ In the meantime we prepare the sauce: we warm up in a pan 3-4 spoonfuls of oil and we lightly fry the shallot; now we add the smoked ham and we let it fry over low heat. /At this point we pour the wine and we let it evaporate. We add the asparagus/ and we let it absorb the sauce for a few minutes, pouring also 2 spoonfuls of water from the pot. After spreading some pepper, we let it cook, while we cook the pasta in the pot. When the pasta is al dente, we drain it and we put it in the pan,/ adding another spoonful of water. We let the pasta absorb the sauce for a couple of minutes,/ then we turn off the stove and we spread the grated cheese and some parsley./ Now we just have to melt and to serve the dish while it's hot.
