OATMEAL
Ingredients:
2 Medium-Sized Apples
Ground Cinnamon (to taste)
Ground Ginger (to taste)
2 Ripe Bananas
1 tsp Vanilla
3-4 cups Almond Milk
2 cups Old-Fashioned Oats
½ cup Chia Seeds (optional)
2 cups Pecans (for a “nutty” oatmeal)
Protein Powder (optional)
¼ cup Honey (any other sweetener also works)
1-2 cups Dried Cranberries (or other dried fruit)
Instructions:
Chop apples into a small dice. Put apples into a large, greased, non-stick pan. Turn heat to medium and add cinnamon, ginger and about a ½ cup water to help them soften. Let cook for between 4-6 minutes until tender.
Mash up bananas in a separate bowl to desired consistency. Once the apples are done, add in your mashed bananas. Adjust your heat to medium-low (the process starts to speed up a bit). Incorporate the banana and add vanilla extract and 2 cups of almond milk. Throughout the process you add almond milk as needed to keep the oatmeal moist (if it starts getting dry, add more milk to get your desired consistency). Then add in the oats and chia seeds, put the lid on and let sit for about 2-4 minutes until thickened.
Once thickened, add a bit more milk if dry, and add pecans, protein powder, honey, and dried cranberries. Stir together, turn heat to low, put on the lid and let sit for about 5 minutes. If you’d like, the oatmeal is done and you can enjoy now or read further for refrigeration instructions.
Take off the lid, allow it to cool, and pop it in the fridge. This recipe provides about 6-8 servings and lasts in the fridge for about a week.
Instructions for Reheating:
Take a desired amount of oatmeal and put it in a microwave safe bowl. Add a couple tablespoons of almond milk and stir it around. Heat to desired temperature and add almond milk as needed for desired consistency. Lastly, add sweetness to taste (I use honey), any other desired fruit, and enjoy!
PROTEIN SHAKE:
Yield: 1 serving
Ingredients:
½ Frozen Banana
4 Frozen Whole Strawberries
Almond Milk (to desired consistency)
Protein Powder
1 tsp Peanut Butter
Honey (to taste)
Instructions:
Put all of your ingredients in a blender. Blend until smooth and add almond milk until you get to your desired consistency.
That simple! It’s ready to serve and enjoy!
CHRISTMAS SHORTBREAD COOKIES
Yield: 16-24 cookies
Ingredients:
2 sticks Softened Butter
2 ½ cups Flour
1 cup Powdered Sugar
2 tbsp Milk
1 tsp Vanilla
Preheat the oven to 325 degrees.
In a stand mixer, or with a hand mixer, beat together your butter and powdered sugar. Once light and fluffy, add flour in batches until well incorporated (beat until just incorporated). Then add milk and vanilla extract.
Your dough will be pretty sandy and appear to be dry but should stick together when squeezed between fingers. Lightly flour surface and pour out all of the dough onto it. Knead dough until it comes into a smooth ball. Wrap in plastic wrap and allow to chill in the fridge for 10-15 minutes.
Generously flour your surface and roll dough to be about ⅜ of an inch in thickness. It’s normal for it to be crumbly. If this happens, simply set it off to the side and re-roll the scraps later. Cut out as many cookies as you can, gather the scraps, and re-roll.
Put your cookies on a non-greased baking sheet leaving about an inch between each cookie (they don’t spread very much at all).
Put into a 325 degree oven for 10-12 minutes until the bottom is golden. Don’t let the edges get too golden, they may be over-baked.
Allow to cool and you could eat them like this or decorate them however you’d like! Enjoy!
ROYAL ICING
Ingredients:
4 cups Powdered Sugar
¼ tsp Cream of Tartar
3 Egg Whites (6 tbsp Pasteurized Egg Whites)
1 tsp Vanilla or Flavoring
Food Coloring
Instructions:
A stand mixer with a whisk attachment works best for this recipe (hand mixer could be used as well).
Sift powdered sugar and cream of tartar into the mixing bowl and whisk until well-combined. Once combined, add egg whites and vanilla (or flavoring).
Whisk this mixture starting with a low speed, slowly speeding it up. Once on high, whisk the mixture until it turns bright white and is thick (we used a little white food coloring to help the color a bit).
Since this icing dries hard you need to move a little quickly. What we did was dye our icing a bunch of different colors and then we distributed them into piping bags to help us decorate.

Making Grandma's Raisin Filled Cookies
