Vegetable Lasanga Roll Ups Recipe
This Vegetable Lasagna Roll ups recipe is easy to make than Classic Lasagna, but gives the same cheesy, saucy Italian flavors and incredible taste.
Ingredients
Lasagna - 12 sheets
Olive oil - 2 tbsps
Garlic - 2 cloves minced
Italian seasoning - 1 tbsp
Onion - 1 small
Capsicum - 1 small
Mushrooms - 10-12 Nos
Spinach - a bunch
Salt - 1 tbsp
Pepper - 1 tbsp
Sour cream - 2 cups (16 oz container)
Mozzarella cheese - 2 cups
Marinara sauce (Red pasta sauce) - 2 cups
Instructions
1. In a large pot, bring water to boil with little salt, olive oil and add lasagna sheets. Cook for 8 minutes stirring occasionally. Drain it and place it on parchment paper for cooling.
2. In a large pan, add a tbsp of Olive oil and saute garlic and Italian seasoning. Add chopped onions, capsicum, mushrooms and cook it for 5 mins. Add chopped Spinach, Salt, Pepper, mix it, cook for a minute and turn off the stove, let it cool.
3. In a large mixing bowl, add sour cream, sauteed vegetable mix, 1 cup of mozzarella cheese, mix it and the cheese filling is ready.
Baking
1. Preheat oven to 350°F or 180°C.
2. In a large baking pan, layer the bottom with the marinara sauce (red pasta sauce). i am using store bought pasta sauce, you can make the sauce at home by pureeing tomato, garlic, basil, oregano, salt and pepper.
3. Start making lasagna roll ups by placing the cheese filling on the lasagna sheet and rolling it slowly.
4. Arrange the lasagna roll ups on top of the marinara sauce in the baking pan.
5. After making all the lasagna rolls, pour some marinara sauce on top and bake it covered with aluminum foil for 15 minutes.
6. Add the mozzarella cheese and Bake it for another 15 minutes.
7. If you want the cheese to get brown, broil it uncovered for 2-3 minutes.
8. Serve it hot and i am sure the pan will be empty in minutes !!
Notes:
1. Cottage cheese will be a great replacement for sour cream in this recipe, if you are looking for low fat options.
2. Vegetables like eggplant, zucchini, carrots, broccoli can also be used in this recipe.
3. Any combination of cheeses like Parmesan cheese, Cheddar cheese or other types can be used in the cheese filling.
4. These can be made ahead and stored in the freezer which makes it perfect for guests or weeknight meals.

Rollup Vegetable Lasagne with JIll's Game Changer Cheeze Sauce
Heat Oven to 375 F. Pre-boil lasagne pasta, then rinse cold and lay them out on a rack.
Filling: Use any vegetable you like. I used cubed sweet potatoes, riced cauliflower, 1 scallion chopped, chopped portabella mushrooms, 1 cup of chopped parsley, and then also used Soy curl crumbles presoaked in water and liquid smoke and then drained. I added 1 can tomato paste and about half a 15 oz can tomato sauce fat-free from Trader Joes. Spice to taste withe Italian spices, dried basil, salt, pepper, onion powder and garlic. Let simmer until vegetable is fork tender. Now put the filling on the individual lasagna pasta and roll it up. In a glass casserole pour the rest of tomato sauce as base, then put the lasagna roll ups in. Pour the cheeze sauce over the lasagne and put in oven for 35 minutes . Enjoy!

Angela Kay has done it again. This time an amazing twist on a traditional lasagna using her home canned pasta sauce. These homemade lasagna roll ups take less time to bake than a traditional lasagna and are easier to portion out than a traditional lasagna, while still tasting like a wonderful lasagna.
Ingredients:
Pasta Sauce of your choice
lasagna noodles
1/2 pound of Italian sausage
1 cup chopped fresh spinach
1 (16oz) container whole milk ricotta cheese
2 cups mozzarella cheese, divided
1/2 cup Parmesan cheese
