4 c Dried apples or peaches
2 c Water
1/2 c Sugar
1/2 ts Ground cinnamon
Fried pie pastry Segetable oil Sugar Fried pie pastry: 3 c All-purpose flour
1 ts Salt
3/4 c Shortening
1 Egg; beaten
1/4 c Water
1 ts Vinegar

Combine apples and water in a large saucepan; bring to a boil. Reduce heat; cover and simmer about 30 minutes or until tender. Cool; mash slightly, if necessary. Stir in 1/2 cup sugar and cinnamon, and set aside. Divide pastry
into thirds; roll each portion to 1/4-inch thickness on waxed paper. Cut into 5-inch circles. Place about 2 tablespoons apple mixture on half of each pastry circle. To seal pies, dip fingers in water, and moisten edges of pastry circles; fold circles in half, making sure edges are even. Press edges of filled pastry firmly together using a fork dipped in flour. Heat 1/2 inch of oil to 375 degrees in a large skillet. Fry pies until golden brown on both sides, turning once. Drain well on paper towels. Sprinkle FRIED PIE PAStrY Combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal. Combine egg and water; sprinkle over flour mixture. Add vinegar, and lightly stir with a fork until dry ingredients are moistened. Shape into a ball. Wrap pastry in waxed dozen 5-inch pies. -----

This recipe yields about 8 - 10 apple pies
INGREDIENTS:
3 Granny Smith Apples
400 g Puff Pastry, takes about 3hrs to thaw out (usually found in the frozen section of the supermarket)
1/4 - 1/2 cup Brown sugar
2 1/2 tsps Lemon juice
1/8 tsp ground allspice
freshly grated nutmeg to taste
1/2 tsp or more cinnamon
2 1/2 tsp vanilla
2 1/2 tsps unsalted butter
1 tbsp cornstarch or flour
2 tbsps apple juice or water
pinch or two of salt
Oil for deepfrying or use an airfryer (Puff Pastry can be baked but I'm trying to recreate a specific taste so I fry them)
For the cinnamon sugar:
1 tbsp white sugar
few pinches cinnamon

Kalitsounia: Mini Fried Cheese Pies from Crete

Makes 25-30 pies:
For the dough:
• 3 and ½ -4 cups all-purpose flour
• ¼ cup olive oil
• 1 and ½ cups water
• 1 tablespoon freshly squeezed lemon juice
• ½ teaspoon salt
For the filling:
• 1-pound feta cheese, crumbled
• 1-pound whole milk ricotta cheese
• 1 large egg, beaten
• 2 tablespoons finely chopped fresh mint leaves
Oil for frying
To make the dough, combine all of the dough ingredients in the bowl of a tabletop mixer fitted with the hook attachment. Knead for 5 minutes or until the dough is smooth. Add a little more flour if the dough is too sticky. Cover with plastic wrap and set aside to rest at room temperature for an hour.
Note: This dough can be kneaded by hand as well. Combine all of the ingredients in a large bowl and knead 5-7 minutes or until a smooth ball of dough is formed adding a little flour if the dough is too sticky.
To make the filling, combine all of the ingredients in a bowl and mix well.
Cut the dough into 8 portions. Roll each portion to 1/8-inch-thick rectangle on a lightly floured surface. This can also be achieved by using a pasta roller attachment. Using a 4- inch round cookie cutter, cut out rounds of dough and set aside.
Place a tablespoon of filling onto each round and fold over to seal. Press the edges together with a fork to seal. Place on a baking tray lined with a kitchen towel that has been lightly floured so that the pies don’t stick.
Pierce 2-3 holes on the top layer of dough so that steam releases while frying to prevent them from bursting open.
Fry the Kalitsounia 2-3 minutes on each side or until golden.
Set on a plate lined with paper towels to drain the excess oil. Serve immediately.
Uncooked pies can be stored in the freezer up to a month.
