2 1/2 c Dates
pitted and chopped
2 c Candied Citrus Peel :
: chopped 2 c Seeded raisins
2 c Seedless raisins
1 1/2 c Currants
1 1/2 c Almonds blanched
1 1/2 c Maraschino Cherries :
: drained,chopped 1/2 c Maraschino cherry liquid
1/2 c Brandy -- or fruit juice
1 cn Crushed Pineapple In Water
19 0z. - 540 ml
2 c Sugar
1 c Strawberry jam
4 c Flour
1 1/2 ts Baking soda
2 ts Cinnamon
1 ts Salt
1/2 ts Cloves
1/2 ts Allspice
2 c Butter
2 c Sugar
12 ea Eggs
1 Brandy
DAY 1 - In a large bowl, mix together dates, peel, raisins, currants, almonds and drained cherries(reserve liquid). Stir in brandy or fruit juice. Cover with plastic wrap and let stand at room temperature overnight. In a saucepan, combine pineapple and two cups sugar. Bring to a boil, reduce heat and simmer, uncovered, stirring frequently, 30 - 40 min., or until mixture thickens. There should be
about 2 1/2 c of pineapple misture. Remove from heat, stir in reserved cherry liquid and jam. Cover and refrigerate overnight. DAY 2 - Generously grease and line 6 9x5 inch loaf pans or three standard wedding cake pans, with waxed paper, aluminum foil or parchment. Grease lining. In a bowl, combine flour, baking soda, cinnamon, salt, cloves and allspice. Add one cup of flour mixture to date mixture and toss to thoroughly coat fruits. In a large mixing bowl, cream butter and two cups sugar. Beat in eggs one at a time, blending well after each addition. Alternately stir small amounts of flour mixture and pineapple mixture into butter mixture. Mix fruit into batter well. Spoon batter into prepared pans. Place a large, shallow pan of water on bottom rack of oven. Fill half full with hot water and preheat oven to 275. Place loaf pans on middle rack and bake 1 1/2 - 2 hours or until a cake tester inserted in the centre comes out clean. Remove cakes from oven, cool 10 min. Remove from pans, peel off paper and cool. Wrap individually in cheesecloth soaked in additional brandy. Wrap in plastic wrap, then aluminum foil. Store in a cool place and moisten cheesecloth occasionally with brandy. Quick One-Day Moist Fruitcake
This is a great recipe for a last minute fruitcake. It's nice and moist and only takes a day to make! Substitute your favorite dried fruits, nuts, and liqueur.
Makes a 9 round or 8 square.
Ingredients:
2½ lbs Mixed dried fruit/glace fruit
2 sticks + 2 tbsp Butter
1¼ cups Brown sugar
1 tbsp Corn syrup
½ lemon, juice and zest
¼ tsp Nutmeg
¼ tsp Allspice
¼ tsp Cloves
¼ tsp Salt
1 tsp Cinnamon
½ tsp Curry powder
2½ oz Blanched almonds, chopped
¾ cup Brandy
1 tbsp Cornflour
4 Eggs
2 cups Flour
1 tsp Baking powder
1 tsp Baking soda
- Preheat oven to 320ºF/160ºC.
- Line baking pan with baking parchment. If using a regular baking pan, wrap some newsprint or parcel paper around the outside of the pan and secure with baking twine.
- In a large pot, bring fruit, butter, brown sugar, and corn syrup to a boil, stirring constantly.
- Once bubbling, add in lemon zest, lemon juice, nutmeg, allspice, cloves, cinnamon, curry powder, salt, almonds, and brandy.
- Simmer for 10 min, stirring constantly.
- Remove from heat and cool completely.
- Once cool, stir in corn flour.
- Mix in eggs, then flour, baking powder, and baking soda.
- Scrape into prepared pan.
- Bake at 320ºF/160ºC for 30min. Then reduce temperature to 250ºF/120ºC and bake for 3½ hrs or until done.
Regular 8 square baking pan -

3/4 cup all purpose flour
1/2 tsp baking powder

Lovely Christmas Fruitcake Recipe
CHRISTMAS FRUITCAKE
To kick off the festive season, I’ll be making a very simple and chic version of the Christmas Fruitcake - the first of four delightful holiday recipes. This frosting-free version of the dessert can be served at tea time, any day of the week. Happy holidays to you and yours!

INGREDIENTS
100 golden raisins
100 grams of raisins
100 ml of dark rum
300 grams of all-purpose flour
1/2 teaspoon of baking powder
1/4 teaspoon 200 grams unsalted butter, at room temperature
150 grams of sugar
4 eggs
1/4 teaspoon of salt
65 grams of dried apricots, coarsely chopped
65 grams of dried pears, coarsely chopped
65 dried peaches, coarsely chopped
50 grams of apricot jam
40 grams of glace cherries

INSTRUCTIONS
*This cake needs to be baked at least 4 days before being eaten.
Preheat an oven 350 degrees F and grease loaf pan with butter or cooking spray.
Combine all of the raisins in a medium bowl and saturate with the rum.
All the raisins to soak for at least 3 hours or overnight.
Sift together the flour, baking powder and salt.
In the bowl of a kitchen aid mixer beat the butter and sugar using the paddle attachment.
Add the eggs one at the time.
Add the flour mix and mix until the batter comes together.
Drain the excess rum from the raisins and fold them in along with the apricots, pears and peaches. Transfer the batter to a loaf pan and bake until the top is golden brown and a toothpick inserted into the center of the cake comes out cleanly, about 50 minutes.
Remove from the oven and let it cool.
Heat the apricot jam with a tablespoon of water until runny.
Remove from the mold, brush it with apricot glaze and decorate the top of the cake with the candied cherries.
Wrap the cake tightly with plastic wrap and let it sit at room temperature for 3 days before serving.
And voila!

FRUIT CAKE
Salah satu cake legend dan sangat terkenal. Biasa disajikan untuk acara natal maupun wedding dan tahun baru.
Fruit Cake di resep ini menggunakan buah kering yang relatif banyak. Jadi bukan sekedar taburan dan sekedar saja buahnya. Bisa menggunakan campuran raisin, sukade, cherry, berry sesuai selera saja.
Aroma kayu manis dan spikuk membuat citra rasa cake ini istimewa. Apalagi bagi penyuka buah kering. Meski buah keringnya banyak, tapi rasa manisnya masih wajar.
Cake ini mengandung brandy/whisky tapi bisa diganti dengan rhum non alkohol. Jika tidak mau menggunakan bahan ini bisa diskip tapi rasa dan teksturnya pasti tidak sama.
Cake ini dipanggang di dalam oven dengan waktu yang lumayan lama. Karena kandungan buah keringnya banyak. Bahkan ada loh yang sampai 2 3 jam dipanggang di dalam oven. Waktu dan suhu oven yang saya gunakan bisa tidak sama dengan oven teman teman. Jadi rajin rajin melihat cake dan melakukan test tusuk. Kemungkinan waktu yang kalian perlukan bisa lebih cepat atau bisa lebih lama. Bila perlu menjelang akan matang, permukaan cake bisa diberi alumunium foil agar permukaan cake tidak terlalu kering sewaktu di oven. Meski permukaan agak kering tapi bagian dalam cake padat dan lembut.
Note : Pada saat memasukkan telur, harus satu demi satu dengan jarak 1 menit ya.
Setelah matang, potong cake setelah benar benar dingin. Meski permukaan cake agak kering, cake tetap lembut meski sudah berhari asal disimpan di wadah tertutup.
BAHAN :
550 gram Fruits Mix
80 gram Brandy/Whisky atau Rhum non alkohol
30 gram tepung untuk taburan ke dalam buah kering (fruit mix)

120 gram butter (suhu ruang)
30 gram granulated sugar (gula pasir)
30 gram palm sugar atau brown sugar
3 butir telur
1 butir kuning telur
100 gram tepung protein sedang
1/2 sdt baking powder
1 sdt bubuk kayu manis
1 sdt bubuk spikiuk
Gunakan takaran sdt untuk baking ya

INGREDIENTS
550 gram of Fruits Mix
80 gram of Brandy/Whisky or rhum non alcohol
30 gram of flour

120 gram of butter (room temperature)
30 gram granulated sugar
30 gram palm sugar or brown sugar
3 egg
1 egg yolk
100 gram all purpose flour
1/2 tsp of baking powder
1 tsp cinnamon powder
1 tsp spiku powder
Note : The temperature of the oven and the time I used to bake could not be the same as the type of the oven you have. So do a test by piercing the inside of the cake if needed. After the cake is cold, keep it in a closed container.
