How To make Libby's Pumpkin Pecan Pie ~
pumpkin layer:
1 Egg; lightly beaten
1 c Libby's solid pack pumpkin
1/3 c Granulated sugar
1 ts Pumpkin pie spice
1 Unbaked 9-inch pie shell
pecan layer:
2/3 c Light corn syrup
2 Eggs; lightly beaten
1/2 c Granulated sugar
3 tb Butter or margarine; melted
1/2 ts Vanilla extract
1 c Pecan halves
Combine egg, pumpkin, sugar and pie spice in medium bowl. Spread over bottom of pie shell. Combine corn syrup, eggs, sugar, butter and vanilla in the same bowl; stir in pecans. Spoon over pumpkin layer. Bake in preheated 350 degree oven for 50 minutes or until filling is set. Cool on wire rack. Note: This pie looks like a pecan pie, but is not so sweet. I think the flavors and textures tend to compete (pecan vs pumpkin). If a full cup of sugar were to be used in the pumpkin layer, the result might be improved. -----

Ingredients
3/4 cup Caster Sugar
1 teaspoon Ground Cinnamon
1/2 teaspoon Salt
1/2 teaspoon Ground Ginger
1/4 teaspoon Ground Cloves
2 Large Eggs - Please use cage free eggs
1 can 450G LIBBY'S® 100% Pure Pumpkin or 450g of Pumpkin which has been cooked(steam or oven) mashed and well drained
1 can 420g Evaporated Milk
2 baked 2-cup volume) pie shell or a 1 deep dished pie shell
Whipped cream to serve
MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
POUR into pie shell.
BAKE in preheated 230c oven for 15 minutes. Reduce temperature to 180c bake for 40 to 50 minutes or until knife inserted near center comes out clean.
Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.
Libby's Easy Pumpkin Pie Mix (vegan)
What is Thanksgiving without a good ol' pumpkin pie? With the holidays around the corner, life just seems to get really busy. Sometimes we need easy recipes that we can whip up in the kitchen in no time!
Here's a demonstration of how to make Libby's easy pumpkin pie mix.
Filling:
1 can of Libby's Easy Pumpkin Pie Mix
1/2 c of aquafaba
2/3 c of coconut milk
Please use pie crust of your choice. This is the recipe for the pie crust I used in this video:
Mix together and add to your pie shell
Pie crust:
3 c flour
1 tbspn baking powder
2 sticks of vegan butter
4.5 tbspn Just Egg (egg substitute)
1/3 c of sugar (optional)
Add baking powder to flour and mix
In separate bowl mix butter, sugar, and egg substitute
Combine wet ingredients to dry ingredients
Form dough and place into your pie pan
The pie pan I used was a 9 inch round
Blind baked it for about 20 minutes at 350 (optional)
Add filling to pie shell and bake at 425 degrees for 15 minutes. Reduce oven to 350 degrees and bake for another 50 minutes. After pie is done baking please allow it to cool and set for about 2 hours.

Whip Up a Quick and Easy Pumpkin Pie (Libby's Recipe)
This is a very easy recipe and works every time. If you'd like to make it a little more homemade, you can always make your own crust and you can puree your own pumpkin.
To make your pumpkin puree, cut a pie pumpkin in quarters, scoop out seeds, place in a large microwave safe bowl with some water in the bottom, cover with cling film, and cook for 15min in mircowave. Once flesh is cooked, puree with food processor or blender. I ususally pass the puree through a sieve to make sure I get a very smooth puree.

INGREDIENTS
3/4 cup granulated sugar

1/2 teaspoon salt
1/2 teaspoon ground ginger

1 unbaked 9-inch (4-cup volume) deep-dish pie shell
