How To make Libby's Great Pumpkin Cookie
4 c Flour; unsifted
2 c Oats; quick or old fashion
2 ts Baking soda
2 ts Cinnamon
1 ts Salt
1 1/2 c Butter/margarine; softened
2 c Brown sugar; firmly packed
1 c Sugar; granulated
1 Egg
1 ts Vanilla
1 cn Solid pack pumpkin (16oz)
1 c Chocolate morsels; semisweet
ASSORTED ICINGS OR PEANUT-BUTTER-ASSORTED CANDIES, RAISINS OR NUTS- Preheat oven to 350. Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter, add sugars, beat until light & fluffy. Add egg & vanilla; mix well. Alternate additions of dry ingredients & pumpkin, mixing well after each. Stir in morsels. For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet; spread into pumpkin shape using a thin spatula. Add a bit more dough to form stem. Bake at 350 for 20-25 minutes. Cool & decorate as desired. -----

Hello, This is Margie from, It's No Secret ! I would like to welcome you to this video. I love a soft cookie like this one. Chocolate chip, Walnut Pumpkin Cookies are a great cookie to enjoy with a cup of tea or coffee with a good friend on a Snowy Holiday evening. Or just through them into you lunchbox. That is mostly how I will be eating them. Well anyway, this is one for my favorites. Especially the icing. I also use this icing on a maple cookie. Instead of vanilla I use maple extract. Lets get started

INGREDIENTS:
●4 cups all purpose flour
●2 teaspoons baking powder
●1 teaspoon baking soda
●1 teaspoon salt
●2 teaspoons ground cinnamon
●1 teaspoon allspice
●2 cups vegetable shortening
●2 cups granulated sugar
●1 can (15 oz.) LIBBY'S 100% Pure Pumpkin
●2 large eggs
●4 teaspoons vanilla extract, divided
●2 cups raisins
●1 cup nuts, chopped
●2/3 cup butter, softened
●3 teaspoons to 4 rum extract
●4 cups powdered sugar
●1/2 cup NESTLÉ CARNATION Evaporated Milk
●What's Next for the Cookies:
●350 F or 175 C.
●30 seconds. Add pumpkin, eggs and 2 teaspoons vanilla extract beat until blended. Gradually add flour mixture into pumpkin mixture at low speed until combined. Stir in raisins and nuts. Drop by rounded teaspoons onto ungreased baking sheets.
●12 to 15 minutes or until edges are golden brown. Cool on baking sheets for 2 minutes remove to wire rack to cool completely. Spread each cookie with frosting.
●What's Next for the Frosting:
●Beat butter, rum extract and remaining vanilla extract in medium mixer bowl until creamy. Gradually beat in powdered sugar and evaporated milk until smooth (frosting will be thin).

Two Ingredient Pumpkin Cookies!
You only need two ingredients to make these fast and easy pumpkin cookies!
1 box of Spice Cake mix
1 15oz can of Pumpkin
Mix the two ingredients together
Make 1tbsp sized balls of dough
Place dough on cookie sheets 1-2 inches apart
Bake at 325 degrees for 10-12 minutes
Let cool 2 minutes
Place cookies on a cooling rack
