How To make Libby's Great Pumpkin Cookie
4 c Flour; unsifted
2 c Oats; quick or old fashion
2 ts Baking soda
2 ts Cinnamon
1 ts Salt
1 1/2 c Butter/margarine; softened
2 c Brown sugar; firmly packed
1 c Sugar; granulated
1 Egg
1 ts Vanilla
1 cn Solid pack pumpkin (16oz)
1 c Chocolate morsels; semisweet
ASSORTED ICINGS OR PEANUT-BUTTER-ASSORTED CANDIES, RAISINS OR NUTS- Preheat oven to 350. Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter, add sugars, beat until light & fluffy. Add egg & vanilla; mix well. Alternate additions of dry ingredients & pumpkin, mixing well after each. Stir in morsels. For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet; spread into pumpkin shape using a thin spatula. Add a bit more dough to form stem. Bake at 350 for 20-25 minutes. Cool & decorate as desired. -----

Pumpkin Chocolate Chip Cookies:
2 Cups Flour
1 Cup Oats (Quick or Old Fashioned)
1 Tsp Baking Soda
1 Tsp Ground Cinnamon
1/2 Tsp Salt
1 Cup Butter, Softened
1 Cup Firmly Packed Brown Sugar
1 Cup Sugar
1 Egg, Slightly Beaten
1 Tsp Vanilla
1 Cup Libby's Solid Pack Pumpkin
1 Cup Chocolate Chips of your choice
Preheat your oven to 350 degrees. Combine first 5 ingredients. In a separate bowl or with a mixer, cream butter and sugars. Beating until light and fluffy. Beat in egg then add vanilla. Mix Well. Alternate adding dry ingredients and pumpkin. Mix until just incorporated. Add chocolate chips. Bake on a lined baking sheet for 15-18 minutes. Pull out just before they lose that shine. Enjoy! Makes 4 dozen cookies.

2½ cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon

Pumpkin Cookies
Pumpkin cookies are GREAT all year round, but if only there were fresh pumpkins all year round! These cookies can be made with canned pumpkin puree but I like to use fresh pumpkin (I provided a link on how to make fresh pumpkin puree). You change this recipe by adding or eliminating raisins, chocolate chips, nuts, cranberries and more.

Ingredients:
2 cups flour
1/3 cups quick oats
1 tspn baking soda
1 tspn cinnamon
1/2 tspn salt
1 cup softened butter (2 sticks)
1 cup brown sugar (light or dark)
1 cup sugar
1 cup pumpkin puree (fresh or canned)
1 lg egg
1 tspn vanilla extract

Directions:
1) Mix dry ingredients until well incorporated: 2 cups of flour, 1 1/3 cups of dry oats, 1 tspn baking soda, 1 tspn cinnamon, 1/2 tspn salt
2) Mix 1 cup of butter, 1 cup of brown sugar, and 1 cup of sugar until well incorporated.
3) Add 1 tspn of vanilla extract and 1 cup of pumpkin puree; mix until well incorporated
4) Add dry ingredients mix into wet ingredients; mix until well incorporated
5) Add 3/4 cups of rains and mix well (at this stage you can add whatever mix-ins you'd like such as nuts, chocolate chips, cranberries and more... if you are adding additional items add 3/4 cups to 1 cup of your mix in)
5) Drop batter by tablespoon full onto baking sheet 2 apart
6) Bake at 350 degrees for 14-16 minutes
7) Cool on baking sheet for 2 minutes then move to wire rack
