How To make Libby's Great Pumpkin Cookie
4 c Flour; unsifted
2 c Oats; quick or old fashion
2 ts Baking soda
2 ts Cinnamon
1 ts Salt
1 1/2 c Butter/margarine; softened
2 c Brown sugar; firmly packed
1 c Sugar; granulated
1 Egg
1 ts Vanilla
1 cn Solid pack pumpkin (16oz)
1 c Chocolate morsels; semisweet
ASSORTED ICINGS OR PEANUT-BUTTER-ASSORTED CANDIES, RAISINS OR NUTS- Preheat oven to 350. Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter, add sugars, beat until light & fluffy. Add egg & vanilla; mix well. Alternate additions of dry ingredients & pumpkin, mixing well after each. Stir in morsels. For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet; spread into pumpkin shape using a thin spatula. Add a bit more dough to form stem. Bake at 350 for 20-25 minutes. Cool & decorate as desired. -----

Chocolate chip, Walnut Pumpkin Cookies are a great cookie to enjoy with a cup of tea or coffee with a good friend on a Snowy Holiday evening. Or just through them into you lunchbox. That is mostly how I will be eating them. Well anyway, this is one for my favorites. Especially the icing. I also use this icing on a maple cookie. Instead of vanilla I use maple extract. Lets get started
Pumpkin Cookies

Pumpkin Cookies___
Cookies:
2½ cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
½ tsp nutmeg
½ tsp salt
½ cup butter, softened
1½ cups sugar
1 cup canned pumpkin
1 egg
1 tsp vanilla
Glaze:
2 cups powdered sugar
3 Tbsp milk
1 Tbsp melted butter
1 tsp vanilla
• Preheat oven to 350°.
• Whisk together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
• In a medium bowl, cream together the butter and sugar. Add pumpkin, egg and vanilla. Beat until creamy.
• Mix in the dry ingredients. Drop by spoonfuls onto a cookie sheet.
• Bake for 15-20 minutes.
• To make the glaze, combine the powdered sugar, milk, butter and vanilla. Add milk if needed. Drizzle over the cookies.

Today we are making pumpkin cookies and I do a tiny bot of decorating. There are great and are not to sweet so you can taste the pumpkin clearly.
Butter cream frosting used

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup butter (1 stick), softened
1 cup LIBBY'S® 100% Pure Pumpkin
1 large egg
1 teaspoons vanilla extract
*optional 1/4 tsp ground mace
icing ing
2 cups powdered sugar, sifted
3 tablespoons milk
1 tablespoon butter, softened
1 teaspoon vanilla extract
Preheat oven to 400deg and prepare a greased or parchment lined sheet pan.

Cream butter and sugar till light in color and fluffy. Add wet ingredients and beat lightly for about two minutes. Add dry ingredients and mix until almost smooth. Turn oven down to 350 degrees and place on parchment lined baking sheet and cook for 15 to 18 minutes
icing
Combine sifted powdered sugar, milk, 1 tablespoon butter and 1 teaspoon vanilla extract in small bowl until smooth. Drizzle over cookies.
