2 Eggs, slightly beaten 1 cn (16 oz) Libby's Solid Pack Pumpkin 3/4 c Sugar 1/2 ts Salt 1 t Ground cinnamon 1/2 ts Ground ginger 1/4 ts Ground cloves 1 cn (13 fl oz) evaporated milk 1 9-inch unbaked pie shell 1>. Preheat oven to 425?F. Mix filling ingredients in order given. Pour into pastry shell. Bake at 425?F for 15 minutes. Reduce temperature to 350?F and continue baking for 45 minutes or until a knife inserted into center of pie filling comes out clean. Cool. Top with whipped cream.

Pie 1: Famous Pumpkin Pie:
Combine dry ingredients: ½ tsp salt, 1 tsp. ground cinnamon, ½ tsp ground ginger, 1/4 tsp ground cloves and ¾ cup of sugar. Mix all that in a little bowl. Beat 2 eggs in a big bowl. Add the can o’ pumpkin and the sugary spice mix. Gradually stir in 12 oz of evaporated milk. Pour it into your pie shell.
Pie 2: New-Fashioned Pumpkin Pie: Beating 2 eggs in a large bowl. Add ½ tsp salt, 1 tsp. ground cinnamon, ½ tsp ground ginger, 1/4 tsp ground cloves and a can of pumpkin to the eggs. Gradually stir in 1 cup evaporated milk and 1¾ cups of sweetened condensed milk. Pour into your pie crust.
Each of these pies goes into a 425-degree Fahrenheit oven. After 15 minutes reduce the temperature to 350-degree Fahrenheit for 30-40 minutes. Check for doneness by inserting a butter knife into the middle. If it comes out clean, then it’s done. Let the pies cool for 2 hours and then serve or put ‘em in the fridge.

I've walked past the tiny American foods section in my local supermarket (in Sydney's Inner West) countless times, and with Thanksgiving coming up, I thought I would attempt to make a pumpkin pie for the first time ever... and it didn't go so well :D But despite having a slightly overcooked pie, we did enjoy it.
